Favorite Eggplant Casserole

Ingredients
- Servings: 4
- 1 eggplant, medium sized
- 4 slices bacon
- 1/2 cup minced onion
- 1/2 cup green pepper, chopped
- 4 cups canned tomatoes, drained
- 1 cup drained tomato juice
- 1/2 cup celery, diced
- salt and pepper
- 1 dash oregano
- 1 cup mixed mushrooms
- 1/2 cup parmesan cheese, grated
Recipe
- 1 wash, skin and cut up eggplant into cubes.
- 2 mince bacon and heat in skillet.
- 3 add onion and pepper and saute until bacon is done.
- 4 add eggplant, tomatoes, juice and celery. simmer until tender.
- 5 put mixture in casserole dish and season with salt, pepper and a dash of oregano.
- 6 fold in mushrooms and sprinkle parmesan cheese on top.
- 7 bake at 350 degrees for 20 minutes.
