Favorite Eggplant Casserole

Total Time: 50 mins Preparation Time: 10 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 eggplant, medium sized
  • 4 slices bacon
  • 1/2 cup minced onion
  • 1/2 cup green pepper, chopped
  • 4 cups canned tomatoes, drained
  • 1 cup drained tomato juice
  • 1/2 cup celery, diced
  • salt and pepper
  • 1 dash oregano
  • 1 cup mixed mushrooms
  • 1/2 cup parmesan cheese, grated

Recipe

  • 1 wash, skin and cut up eggplant into cubes.
  • 2 mince bacon and heat in skillet.
  • 3 add onion and pepper and saute until bacon is done.
  • 4 add eggplant, tomatoes, juice and celery. simmer until tender.
  • 5 put mixture in casserole dish and season with salt, pepper and a dash of oregano.
  • 6 fold in mushrooms and sprinkle parmesan cheese on top.
  • 7 bake at 350 degrees for 20 minutes.
