Hickory-smoked Cheese Dip

Ingredients

  • 1 cup cottage cheese
  • 1/2 cup sour cream
  • 1/4 teaspoon garlic, minced
  • 1/2 teaspoon salt, hickory-smoked
  • 1 tablespoon green onion, minced, use all

Recipe

  • 1 blend the cottage cheese and sour cream until smooth.
  • 2 add the remaining ingredients blending well.
  • 3 cover and chill.
  • 4 suggested dippers: potato chips, water crackers, ham, mushrooms, snow peas

Guilt-free Onion Soup (crock Pot)

Ingredients

  • Servings: 4
  • 4 medium onions, thinly sliced
  • 5 cups beef broth
  • 3 tablespoons flour
  • 1 cup mushroom, sliced
  • 1/4 teaspoon pepper
  • 4 slices french bread, toasted
  • 3/4 cup reduced-fat swiss cheese, shredded (3 ounces)

Recipe

  • 1 coat a large non-stick skillet with non-stick vegetable spray coating.
  • 2 place over medium-high heat.
  • 3 add onions to skillet; cook until onions are translucent and beginning to caramelize, about 10 minutes.
  • 4 add to crock pot along with beef broth, flour, mushrooms, and pepper.
  • 5 cover; cook on low 7 to 9 hours.
  • 6 preheat broiler.
  • 7 set 4 flameproof bowls on baking sheet.

Duggar's Tater Tot Casserole

  • 1 brown meat & place in large cass. dish.
  • 2 cover with tater tots. mix soup & milk together.
  • 3 pour over top. bake at 350 for 1 hour.

Corn Bread Casserole

  • 2 chicken breasts, small dice
  • 4 slices of good bacon, small dice
  • 8 ounces mushrooms, chopped
  • 1 jiffy cornbread mix
  • 4 ounces of fire roasted chilies
  • 1 cup frozen corn kernels
  • honey

Recipe

  • 1 preheat oven to 350.
  • 2 grease a 9x13 baking pan.
  • 3 cook chicken, bacon and mushrooms together.
  • 4 place chicken, bacon and mushrooms in the bottom of casserole pan.
  • 5 mix jiffy mix according to directions.
  • 6 add chilis and corn to the jiffy mix.
  • 7 pour on top the chicken mixture.
  • 8 bake 45 - 60 minutes or until corn bread is completely baked.
  • 9 serve with a drizzle of honey on top.
  • 10 enjoy!

Kansas City Steak Strips

Ingredients

  • Servings: 6
  • 1 lb lean round steak, trimmed
  • 4 tablespoons butter or 4 tablespoons margarine, divided
  • 1 (10 ounce) can mushroom pieces, drained
  • 1 cup onion, chopped
  • 1 1/2 cups chili sauce (store-bought or try make your own chili sauce)
  • 2 tablespoons all-purpose flour
  • 1/2 cup cold water
  • 1 (9 ounce) package frozen cut green beans, cooked and drained
  • 8 ounces egg noodles, cooked and drained

Recipe

  • 1 cut steaks into thin strips.
  • 2 heat 3 tablespoons butter in a large skillet over medium-high heat.
  • 3 add mushrooms and onion and saute about 2 minutes, until tender, then remove with a slotted spoon and set aside.
  • 4 add remaining butter to skillet, then add steak strips.
  • 5 saute for 5 minutes, stirring occasionally, or until strips are browned on all sides.
  • 6 add chili sauce, cover and simmer about 10 minutes or until meat is tender.

  • 14 ounces chicken broth
  • 1/2 cup rice, uncooked
  • 1/4 cup wild rice, uncooked
  • 2 tablespoons butter
  • 2 1/2 cups mushrooms, coarsely chopped

  • 1 cup cranberry sauce, whole berry
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Garam Masala Sauteed Portabella Mushrooms In Porcini Cream

  • 1 medium onion, finely chopped
  • 2 1/2 tablespoons all-purpose flour
  • 2 1/2 tablespoons dry porcini mushrooms
  • 1 cup of very hot water
  • 1 1/2 teaspoons dried green fenugreek leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup whipping cream
  • 1 1/2 cups water
  • 1 1/2 tablespoons canola oil
  • 6 large portabella mushrooms, washed and dried
  • 1/4 teaspoon asafetida powder (known as hing at indian grocers)
  • 1 tablespoon mango powder (known as amchur at indian grocers)
  • 1 tablespoon garam masala
  • 1/4 teaspoon cayenne pepper
  • 3/4 tablespoon salt
  • 2 tablespoons canola oil

  • 1 for porcini cream curry:.
  • 2 place porcinis and 1 cup of very hot water in a bowl and allow to sit for 30 minutes. strain the mushrooms, reserving the soaking liquid in a small bowl. finely chop the soaked mushrooms and set aside.
  • 3 heat oil in a medium pot, sauté the onions on medium heat until they are brown in color about 5 to 8 minutes. stir in the all-purpose flour and cook for 2 - 3 minutes or until the flour is a light brown color.
  • 4 add the porcini mushrooms and 1 cup of water in which they have been soaking. stir in the additional water, cream, salt and cayenne pepper. bring to a low boil and let it cook uncovered for about 15 minutes. add fenugreek leaves, stir well and cook for another 5 minutes.
  • 5 for portobello mushrooms:.
  • 6 cut each mushroom in 5 or 6 slices or leave them whole if you prefer.
  • 7 heat approx 2 tablespoons of oil on medium heat in a large skillet. sprinkle the asafetida in the hot oil and let it sizzle for 30 seconds. immediately add all of the remaining spices and stir for about 1 to 2 minutes. the spices will foam lightly.
  • 8 add the portobello mushrooms and sauté them in the spice mixture for 3 minutes, while stirring them regularly. make sure the mushrooms are not overcooked, as they will also cook slightly when you pour the hot curry on them.

  • Servings: 4
  • 1 (10 ounce) can campbell cream of chicken soup
  • 1 tablespoon dijon mustard
  • 4 boneless skinless chicken breasts (chicken parts work just as well)

  • 1 cup broccoli floret
  • 1/3 cup milk

  • 2 tablespoons dried onion flakes
  • 1 lb ground beef
  • 1 (10 1/2 ounce) can cream of mushroom soup

  • 1 (8 ounce) el paso enchilada sauce
  • 4 ounces pace picante sauce
  • 8 ounces shredded mozzarella cheese
  • 8 ounces shredded cheddar cheese
  • 10 flour tortillas

  • 1 brown beef with green pepper and onion. drain.
  • 2 grease bottom of a broiler pan, well.
  • 3 preheat oven to 350*.
  • 4 mix all can goods together. heat to hot, but not boiling.

  • 1 preheat oven to 425 degrees f.
  • 2 roll out the pizza dough, making a very thin (1/4") crust.

  • 1 onion, chopped
  • 4 stalks celery, chopped
  • 4 -5 garlic cloves, chopped
  • 6 large mushrooms, sliced

  • 1 cup frozen corn kernels
  • 4 -5 tablespoons chili powder
  • 4 -5 drops tabasco sauce

Recipe

  • 1 in a large skillet - combine the ground meats.

  • 3 drain off most of the excess fat. save some moisture for added flavour.
  • 4 combine browned meat and all ingredients in a large stock pot.
  • 5 bring to a low simmer and allow to cook for a minimum of 1 hour - the longer the better - stirring occasionally.
  • 6 this recipe is perfect for crock pots or slow cookers and can take as long as 8 hours to cook on low.
  • 7 this recipe freezes very well for the smaller families or for those who work outside the home for a fast warm lunch or a ready dinner when you get home.

Garbanzo Roast With Sherry Sauce

Total Time: 1 hr 5 mins Preparation Time: 25 mins Cook Time: 40 mins

Ingredients

  • 1 (16 ounce) can garbanzo beans, drained
  • 1 teaspoon yeast extract
  • 1 1/4 cups walnuts, chopped
  • 1 1/4 cups fresh breadcrumbs
  • 1 onion, finely chopped
  • 1 1/4 cups sliced mushrooms
  • 1 3/4 ounces canned corn, drained
  • 2 cloves garlic, crushed
  • 2 tablespoons dry sherry
  • 2 tablespoons vegetable stock
  • 1 tablespoon cilantro, chopped nicely
  • 8 ounces prepared puff pastry
  • 1 egg, beaten
  • 2 tablespoons milk
  • salt and pepper
  • 1 tablespoon vegetable oil
  • 1 leek, sliced very thin
  • 4 tablespoons dry sherry
  • 2/3 cup vegetable stock

Recipe

  • 1 first process the beans, yeast extract, walnuts and bread crumbs for 30 seconds.
  • 2 then saute the onion and mushrooms in their own juices for approximately 4 minutes in a nice sized skillet.
  • 3 stir in the bean mixture, corn, and crushed garlic.
  • 4 add the sherry, veg.
  • 5 stock, cilantro, and salt and pepper and bind the mixture together.
  • 6 remove your skillet from the heat and set aside to cool completely.
  • 7 preheat your oven to 400 degrees f.
  • 8 roll out the pastry on a lightly floured surface to form a 14x12 inch rectangle.
  • 9 shape bean mixture into a loaf shape as you would a meatloaf and wrap the pastry around it, sealing the edges.
  • 10 be sure to put the seam on the bottom of the loaf.
  • 11 place seam side down on a dampened cookie sheet and score the top in a criss-cross pattern.
  • 12 (score in one direction diagonally completely across top and then in the other direction to make it criss-crossed).
  • 13 mix the egg and milk together and brush over the pastry using a pastry brush.
  • 14 bake in your preheated oven for 25 to 30 minutes.
  • 15 top will be golden brown and beautiful!
  • 16 for the sauce, heat the oil in a pan and saute the leek for 5 minutes.
  • 17 add the sherry and stock and bring to a boil.
  • 18 simmer for 5 minutes and serve with your garbanzo roast!

Guinness Beef Stew In A Crock Pot

Total Time: 8 hrs 40 mins Preparation Time: 40 mins Cook Time: 8 hrs

Ingredients

  • Servings: 10
  • 8 -10 red potatoes, skin on, quartered
  • 6 carrots, peeled, sliced into thick chunks
  • 2 stalks celery, cut in chunks
  • 3 bay leaves
  • 3 lbs stew meat, cubed (i used chuck)
  • 1/2 cup flour
  • 1 dash salt
  • 1 dash pepper
  • 1 dash garlic powder
  • 2 -3 tablespoons olive oil
  • 1 medium onion, diced
  • 4 large garlic cloves, minced
  • 8 ounces baby portabella mushrooms, halved
  • 2 (8 ounce) cans tomato sauce
  • 10 3/4 ounces beef broth (i used consomme)
  • 1 (13 g) envelope lipton onion soup mix
  • 1 teaspoon dried thyme
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 teaspoon creole seasoning (tony chachere's)
  • 1 teaspoon italian herb seasoning (mrs. dash)
  • 12 ounces beer (guinness, draught or stout)
  • 1 cup frozen peas, if desired

Recipe

  • 1 put potato, carrot, and celery chunks in the bottom of crock pot. top with 2 bay leaves.
  • 2 season flour with a dash of salt, pepper and garlic powder and coat the beef with the flour mixture. heat a couple of tbsp of olive oil over med-high heat in a large skillet and add 1 bay leaf. sauté beef in batches, just until browned.(it took me about 3 batches in a 12" skillet). add more oil to pan as necessary for each batch. remove and set aside.
  • 3 add onion and garlic to the same pan and sauté over med heat for a few minutes, then add about half the can of beef broth to deglaze, scraping up the brown bits on the bottom of the pan. (that's flavor!).
  • 4 add meat and onions to crock pot, top with mushrooms.
  • 5 mix remaining beef broth with tomato sauce, onion soup mix, remaining seasonings, and add to crock pot. pour in most of bottle of beer (whatever fits, i had a few sips left for me).
  • 6 cook 8 hours on low heat. stir in frozen peas when done, they'll heat up on their own.
  • 7 serve with crusty french bread!
  • 8 *tony chachere's and mrs. dash are my "go-to" seasonings for everything. you can use your favorite if these are not available.

Kanttarellikastike - Finnish Mushrooms

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 ounces butter
  • 1 large onion, chopped
  • 1 1/2 lbs wild mushrooms, quartered
  • 2 tablespoons vegetable stock
  • 3/4 cup heavy cream
  • salt and black pepper

Recipe

  • 1 heat the butter in a large frying pan, add the onions and sauté over a medium heat until soft and transparent.
  • 2 add the mushrooms and raise the heat to high and cook for about 10 minutes, stirring constantly, or until most of the moisture has evaporated .
  • 3 add the stock, cream, salt and pepper, bring to the boil and cook for a further 10-15 minutes, stirring from time to time, or until the sauce has thickened. serve immediately.

Chicken With Creamy Apple-mushroom Sauce

  • 4 boneless skinless chicken breast halves
  • 1 tablespoon olive oil
  • 3 cups fresh mushrooms, sliced
  • 1 medium onion, sliced
  • 2 garlic cloves, minced
  • 1 1/2 cups reduced-sodium chicken broth
  • 1 teaspoon dried tarragon
  • 1/2 teaspoon pepper
  • 1/8 teaspoon salt
  • 2 cups apples, peeled & sliced (mcintosh)
  • 2 tablespoons cornstarch
  • 3/4 cup low-fat evaporated milk, divided
  • 1 tablespoon fresh parsley, minced

Recipe

  • 1 in a nonstick skillet, brown chicken in oil on both sides; remove and keep warm.
  • 2 in the same skillet, saute the mushrooms, onion and garlic until tender.
  • 3 stir in the broth, tarragon, pepper and salt; bring to a boil.
  • 4 add apples and reserved chicken.
  • 5 reduce heat; cover and simmer until chicken juices run clear.
  • 6 remove chicken to a serving platter.
  • 7 combine cornstarch and 1/4 cup milk until smooth; stir in remaining milk.
  • 8 add to skillet; bring to a boil, cook and stir for 2 minutes or until thickened.
  • 9 serve over chicken; sprinkle with parsley.

Easy Pot Roast

Ingredients

  • Servings: 4
  • 4 -5 lbs chuck roast
  • 1 (10 1/4 ounce) can cream of mushroom soup
  • 1 (1 1/4 ounce) envelope onion soup mix (i use beefy onion flavor)
  • 2 medium onions, peeled and sliced thin
  • seasoning salt
  • garlic powder
  • pepper
  • 1/2 cup water

Recipe

  • 1 preheat oven to 350°f.
  • 2 season the roast with the dry seasonings (don't overdo).
  • 3 sprinkle the dry soup mix onto the meat.
  • 4 spread mushroom soup over the top and add onions.
  • 5 add water, cover tightly with foil.
  • 6 bake for three hours.
  • 7 add any desired vegetables (potatoes, carrots, etc.) during the last hour of cooking.

  • 1 refrigerated 9 inch pie shell, prepared according to the package for a single crust
  • 1/4 cup red bell pepper, diced
  • 1/4 cup yellow bell pepper, diced
  • 1/4 cup green bell pepper, diced
  • 1/2 cup pre-washed broccoli floret, fresh
  • 1/4 cup diced onion
  • 1 cup monterey jack pepper cheese or 1 cup sharp cheddar cheese, shredded

  • 1 lb polska kielbasa, cut into bite size pieces
  • 1 onion, diced
  • 2 tablespoons butter
  • 2 -14 1/2 ounces canned sliced potatoes, drained
  • 2 (10 ounce) cans cream of mushroom soup
  • 1 cup milk
  • 2 cups frozen corn
  • 1 cup cheddar cheese, shredded

Recipe

  • 1 in the bottom or a fairly large pot- saute the sausage and onions in the butter.
  • 2 add the potatoes, cream of mushroom soup, milk and corn.
  • 3 stir together and cook on medium high heat until heated through about 20 minutes.
  • 4 top w/ shredded cheddar cheese if desired.

  • 2 (12 ounce) cans tomato paste
  • 1 (32 ounce) can diced tomatoes
  • 1 (16 ounce) can tomato sauce

  • 1 use a large baking dish (13 x 9 is too small). lightly coat dish with cooking spray. taking biscuits, cut them into sections of about 1 inch (i cut mine 3 strips across, then 3 strips down to make 9 pieces per biscuit) once these are in "cubes", scatter them in the bottom of the prepared baking dish.
  • 2 in a large bowl, combine your spaghetti sauce, seasoning, meat and vegetables and mix well. (this is where your creativity comes in -- how many combinations can there be? you can mix and match meats and veggies as well as use different types of sauce. the combinations are endless.) pour this mixture over the biscuits, then top with cheese.
  • 3 bake @ 300 degrees until done (approximately 30-40 minutes depending on your oven). make sure your biscuit cubes have room to spread out and bake thoroughly -- this is why you use a larger pan.

  • 60 ml water

  • 1 combine sesame oil, pepper, 3 sliced green onions, chillies, garlic, ginger, half the wine and half the soy sauce in a large bowl or storage container, add beef strips and toss to coat. marinade several hours or overnight.
  • 2 heat peanut oil in a pan or wok, add beef mixture in batches and cook until browned, add onion and capsicum and stir-fry a couple of minutes.
  • 3 add mushrooms, choy sum stalks, water, hoisin and the remaining wine and soy sauce, stir-fry about 5 minutes or until vegetables are just tender.

Recipe

  • 1 preheat oven to 350.
  • 2 cut chicken up into bite size pieces.
  • 3 spray a 9 x 13 pan.
  • 4 place chicken in the bottom of the pan.
  • 5 top with the broccoli.
  • 6 in a bowl combine, the soups, mayonnaise and lemon juice.
  • 7 pour evenly over the broccoli layer in the casserole.
  • 8 sprinkle cheese evenly over the soup layer.
  • 9 sprinkle bread crumbs over the cheese.
  • 10 dot with butter.
  • 11 bake at 350 uncovered for 30 minutes until cheese is bubbly.

Karen's Chicken Casserole

Ingredients

  • 1 broiler-fryer chicken (recipe calls for fryer)
  • 1 (6 ounce) box stove top chicken flavor stuffing mix
  • 1 (10 3/4 ounce) can cream of celery soup
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1 (14 ounce) can swanson chicken broth

Recipe

  • 1 pressure cook chicken, 25 minutes.
  • 2 when done, debone and spread chicken evenly in a baking dish (9x13).
  • 3 pour celery soup on chicken layer.
  • 4 pour mushroom soup over chicken soup layer.
  • 5 sprinkle stuffing, then stuffing spice pack over mushroom soup layer.
  • 6 pour broth over all. do not mix.
  • 7 bake at 350 degrees for about 20 minutes.

Garbanzo, Leek & Pasta Soup

  • 20 large whole fresh mushrooms
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 small onion, finely chopped
  • 1 tablespoon minced fresh garlic (to taste) (optional)
  • 1/2 lb lean ground beef
  • 4 slices ham, chopped
  • 1/4 cup grated parmesan cheese
  • 1/3 cup dry sherry
  • 1/3 cup fine breadcrumbs
  • seasoning salt or salt
  • fresh ground black pepper (in place of black pepper if you prefer spicy) or cayenne (in place of black pepper if you prefer spicy)
  • mozzarella cheese, shredded or parmesan cheese, if desired

Recipe

  • 1 prepare a large baking sheet.
  • 2 carefully remove the stems off of the mushroom caps and finely chop; set aside.
  • 3 place the mushroom caps stem side down on a baking sheet and place in a 375 degree f oven for about 12-15 minutes to release their moisture; set aside until cool enough to handle.
  • 4 heat butter and oil in a large skillet until hot and cook the ground beef with onion and garlic until the beef is browned (about 8 minutes) stirring occasionally.
  • 5 add in the chopped mushroom stems, chopped ham, parmesan cheese and sherry; cook stirring for 5 minutes.
  • 6 remove from heat and add in the bread crumbs, salt and pepper (or cayenne pepper if using); mix to combine.
  • 7 divide and stuff the ground beef mixture into each mushroom cap pushing down into the cap using you fingers or the back of a spoon.
  • 8 sprinkle with grated mozzarella cheese or parmesan cheese.
  • 9 set oven to broil heat and broil the caps about 3-inches from heat for about 2-5 minutes.
  • 10 serve hot.

Guiness Slow-cooker Lamb Chops

  • 5 -6 lamb chops (3-4 lbs total)
  • 2 large onions
  • 1 pint guinness stout
  • 1 pint water
  • 1/2 cup butter
  • season salt
  • pepper
  • 1 minced garlic clove
  • 1 dash red pepper flakes
  • 8 ounces quartered mushrooms

Recipe

  • 1 in a large sautee pan melt butter. season lamb chops with seasoned salt & pepper and add to pan a few at a time to sear. remove chops to slow cooker and add onions to melted butter in sautee pan. sweat onions until tender and clear in color. while onions are cooking add quartered mushrooms to slow cooker pot with the lamb chops. when onions are just tender add the whole pint of guiness stout and allow to simmer 5 minutes. pour onions and beer into slow cooker, and then add the pint of water to the sautee pan, simmering for an additional 5 minutes. add sautee liquid to slow cooker and remaining spices to taste. cook on high for 3 to 6 hours on high, or low for 6-10 hours, depending on when you need it to be finished. can be prepped the night ahead but add at least 45 minutes if going from fridge to slow cooker. i serve this with hot buttered egg noodles using the guiness onion sauce like a gravy.

Hot Pizza Dip

  • 8 ounces cream cheese
  • 1/2 cup pizza sauce
  • 1 diced green pepper
  • 1/3 cup diced pepperoni
  • 1 cup shredded mozzarella cheese

Recipe

  • 1 line a pie pan with cream cheese. layer all other ingredients on top ending with green onion. bake at 350° for 15 minutes.
  • 2 note: these ingredients can be adjusted to your personal tastes. they can also be substituted with other items such as olives, sausage (browned and crumbled) or mushrooms.

Garden Vegetable Calzone

  • 1/2 tablespoon oil
  • 25 g leeks
  • 25 g courgettes
  • 2 mushrooms
  • salt
  • pepper
  • 1 tablespoon peas
  • 1 pizza dough
  • 1 tablespoon pizza sauce
  • 25 g mozzarella cheese

Recipe

  • 1 heat the olive oil in a pan and cook the leek and courgette for 3-4 minutes over a medium heat. add the mushrooms and cook for a further 2 minutes. season to taste and stir in the peas. remove from the heat and set aside.
  • 2 brush the sandwich toaster with a little sunflower oil, wiping off the excess with kitchen paper. preheat the sandwich toaster to its highest setting.
  • 3 divide the dough into two and roll out each piece to make a rectangle approximately 25cm x 15cm. score the dough with a knife, dividing each piece into two squares the approximate size of your sandwich toaster plates. on one square spread half the tomato sauce, leaving a 1cm clear margin around the edge. cover the sauce with half the vegetable mixture and mozzarella. brush the edges with a little water and fold the uncovered square of dough over the top to seal in the filling. spend a little time crimping the edges together to get a good seal around the edge. repeat this process for the remaining dough and filling.
  • 4 carefully place the calzones in the toaster and close the lid. cook for 8-9 minutes until the dough is crisp and golden.

Garden Vegetable Spaghetti

  • 1 (16 ounce) package spaghetti
  • 2 tablespoons olive oil
  • 2 medium carrots, sliced
  • 1 small onion, diced

  • 2 tablespoons garlic powder

  • 2 spray a 2 1/2 quart or a 11x7x2 baking dish, set aside.
  • 3 in a large bowl, combine chicken, 1 cup fiesta blend mexican cheese, soups, ro-tel, green chilies and blend well.
  • 4 set aside 12 tortilla wedges.
  • 5 mix remaining tortilla wedges into chicken mixture.

Bacon Mushroom Sauce For Steak

  • 1 cup sour cream
  • 1 (10 ounce) can cream of mushroom soup
  • 2 cups cooked pasta
  • 4 ounces tostitos spicy queso supreme
  • 4 ounces italian cheese blend

  • 1 preheat oven to 350.
  • 2 brown the ground beef and garlic.
  • 3 cook pasta according to the directions
  • 4 mix together soup, sour cream and cheese sauce.
  • 5 mix together all the ingredients and top with shredded cheese and bake for 30 minutes.
