Easy Chicken Marengo (shhhh, It's Campbell's)

Ingredients

  • 8 pieces chicken, one the bone
  • 1 (10 3/4 ounce) can campbell's tomato soup, condensed
  • 1 (10 3/4 ounce) can campbell's french onion soup, condensed

Easy Chicken In The Crock Pot

Total Time: 8 hrs 10 mins Preparation Time: 10 mins Cook Time: 8 hrs

Ingredients

  • Servings: 4
  • 1 whole chicken
  • 1 -2 onion, cut in chunks
  • 4 -6 potatoes, cut in chunks, don't peel (optional)
  • carrot (i use a large handful of baby carrots)
  • 1 (14 ounce) bag frozen green beans
  • garlic powder
  • pepper (other spices can be used to taste such as rosemary, poultry seasoning, sage, etc.)

Recipe

  • 1 put carrots and onions and potatoes (if used) in bottom of crock pot.
  • 2 place rinsed out chicken on top of veggies.
  • 3 move around if needed to close lid.
  • 4 sprinkle a little garlic and pepper on chicken.
  • 5 do not add any liquid.
  • 6 close lid and cook on low about 6 hours.
  • 7 put green beans in crockpot and cook 2 more hours.
  • 8 serve with mashed potatoes (if you didn't cook any with chicken). you can also create a sauce by removing everything to serving dish and then adding cream of chicken/mushroom soup using the broth to thin to the right texture.
  • 9 the chicken will fall apart.

Crockpot Chicken And Dumplings

Ingredients

  • 6 boneless skinless chicken thighs
  • 1 (12 ounce) package frozen peas
  • 1 (1 lb) package baby carrots
  • 1 (10 3/4 ounce) can cream of chicken soup
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 2 (10 3/4 ounce) soup cans water
  • 2 teaspoons chicken bouillon granules
  • 1 (1 1/2 lb) package frozen dumplings
  • salt and pepper
  • 1 cup chopped celery (optional)

Recipe

  • 1 mix all the ingredients together in a crockpot except for the dumplings and cook for 4-6 hours (or until carrots are tender enough to easily cut).
  • 2 slowly add in frozen dumplings one layer at a time and bathe sufficiently in broth from crockpot so dumplings won't stick while adding in the multiple layers. i usually only get half a packs worth of dumplings in the crockpot before i run out of room. once you have gotten all your noodles in, let the dumplings cook for approximately 20 minutes.
  • 3 turn the crokpot off or down to keep warm setting and allow 15 minutes to cool before serving. you will be lucky if there are leftovers.

Honey Herb Chicken Salad

Ingredients

  • 1/4 cup honey
  • 2 tablespoons raspberry vinegar
  • 1 tablespoon rosemary (minced)
  • salt & fresh ground pepper (to taste)
  • 2/3 cup olive oil
  • 2 boneless skinless chicken breast halves
  • 6 ounces mesclun
  • 2 cups cremini mushrooms (sliced thin)
  • 1/2 cup pecans (chopped coarse, toasted)

Recipe

  • 1 whisk together the honey, vinegar, rosemary, and salt and pepper.
  • 2 add oilve oil until emulsified. divide in half.
  • 3 pour one half over chicken. cover . chill 24 hours.
  • 4 chill remaining vinaigrette.
  • 5 heat a well seasoned iron skillet over high heat until very hot.
  • 6 remove chicken from marinade, reserving marinade.
  • 7 sear chicken 2 minutes in pan.
  • 8 turn and reduce heat to medium. add marinade. cover. simmer 5-8 minutes or until chicken is just cooked through.
  • 9 remove from pan. slice.
  • 10 return to pan to coat each piece with sauce. let cool.
  • 11 toss mesclun and mushrooms ith reserved vinaigrette. place on plates.
  • 12 top with chicken and peacans.
  • 13 yum!

Gilroy Marinated Garlic Mushrooms

Ingredients

  • Servings: 6
  • 2 lbs fresh mushrooms
  • 4 garlic cloves, minced
  • 1/3 cup olive oil
  • 2/3 cup wine vinegar
  • 1/3 cup red wine or 1/3 cup wine
  • 2 tablespoons soy sauce
  • 2 tablespoons honey
  • 2 tablespoons parsley, chopped
  • 1 tablespoon salt

Recipe

  • 1 saute garlic in oil and add vinegar, wine, soy sauce, honey, parsley, and salt. stir util mixture is hot.
  • 2 place mushrooms in container and pour hot mixture over mushrooms. marinate for 3 hours or more, turning over several times.
  • 3 you can use marinade for later use on more mushrooms or as a salad dressing.

Easy Chicken Marsala

Ingredients

  • Servings: 4
  • 1 lb thin sliced chicken breast
  • 1 (10 ounce) can au jus gravy
  • 1 small onion, sliced
  • 1/4 cup marsala wine
  • 1 (4 ounce) can sliced mushrooms or 3/4 cup sliced mushrooms
  • 3 garlic cloves, minced
  • 1/2 cup flour
  • 1/2 teaspoon mrs. dash's seasoning
  • 1/4 teaspoon pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • 2 tablespoons butter (or 1 tablespoon butter and 1 tablespoon olive oil)

Recipe

  • 1 in a shallow bowl, mix together the flour, mrs. dash's seasoning, pepper, and oregano. coat each chicken breast in the mixture.
  • 2 put in refrigerator for 15 minutes.
  • 3 put the olive oil in a skillet over medium high heat, then add the butter and stir until it begins to melt.
  • 4 saute the onion and sprinkle garlic powder. saute until onion is clear.
  • 5 once the onion is done, remove from the pan.
  • 6 saute chicken. sprinkle garlic over chicken. cook until the chicken starts to brown. remove the chicken from the pan. add mushrooms; cook until lightly brown.
  • 7 in a small mixing bowl, mix can of gravy and 1/4 cup wine. add gravy-wine mixture to pan and simmer 2 to 5 minutes and return the onion to the pan.
  • 8 let it cook another minute.
  • 9 add the chicken and cook at medium-low temperature for 10 minutes.

Easy Chicken No Rice Casserole

Ingredients

  • 0.25 (10 1/2 ounce) can 98% fat-free cream of mushroom soup
  • 1 (6 ounce) can 98% fat free chicken meat
  • 1/2 cup frozen broccoli, cooked and drained
  • 1/4-1/2 cup shredded nonfat cheddar cheese
  • salt and pepper

Recipe

  • 1 measure out soup and place in regular size glass bowl.
  • 2 drain canned chicken and dump in bowl.
  • 3 cook broccoli until fork tender in microwave or on stove top, drain and place on top of chicken.
  • 4 measure out cheese and stir all ingredients together.
  • 5 place in microwave, uncovered.
  • 6 cook on high for 3 minutes.
  • 7 stir.
  • 8 cook another 2-3 minutes or until the casserole is hot all the way through.
  • 9 enjoy!

Easy Chicken In Wine

  • 1 chicken, cut into pieces (or chicken pieces of your choice)
  • 1/2 cup plain flour
  • 1 teaspoon thyme
  • salt and pepper

  • 1 carton cream
  • 3/4 cup wine

Recipe

  • 1 roll chicken pieces in flour seasoned with thyme, salt and pepper.
  • 2 fry in oil until chicken is golden brown.
  • 3 place chicken pieces in large ovenproof dish.
  • 4 arrange mushrooms and onions around chicken.
  • 5 mix together wine, cream and garlic.
  • 6 add mixture to chicken.
  • 7 cover dish and bake a moderate oven for 30 minutes.
  • 8 turn chicken once during cooking.

Crockpot Chicken And Wild Rice Soup

  • 1 mix all ingredients in crockpot.

Easy Chicken Pot Pie

  • 1 (15 ounce) can mixed vegetables
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 lb cooked chicken
  • 9 1/2 ounces jiffy corn muffin mix
  • 1 egg
  • 1/3 cup milk

Recipe

  • 1 mix jiffy corn muffin mix, egg and milk together in bowl (will be slightly lumpy).
  • 2 set aside.
  • 3 mix can of veggies, soup, and cooked chicken together in bowl.
  • 4 spray 8x8 baking dish with non-stick spray and pour soup mixture in the bottom.
  • 5 pour corn muffin mix on top of soup mixture.
  • 6 bake for about 25 minutes or until cornbread is done.

Grilled Chickpea And Vegetable Salad

Ingredients

  • Servings: 4
  • 1 red pepper, sliced
  • 1 green pepper, sliced
  • 2 zucchini, sliced
  • 2 cups button mushrooms, trimmed
  • 155 g baby spinach
  • 440 g canned chick-peas, rinsed and drained
  • 3 tablespoons basil, shredded
  • 1/2 cup balsamic vinegar
  • 2 tablespoons lemon juice or 2 tablespoons lime juice
  • 2 tablespoons water
  • fresh ground black pepper

Recipe

  • 1 to make marinade place vinegar, lemon and lime juice, water and black pepper in a bowl and whisk.
  • 2 heat a non stick char grill or fry pan on a high heat. brush peppers, zucchini and mushrooms with marinade. add vegetables to grill or pan and cook for 1-2 minutes or until golden.
  • 3 to serve place spinach leave on serving plated and top with vegetables. scatter the chickpeas and basil then drizzle with remaining marinade. serve with crusty wholemeal bread rolls.

  • cornstarch (to thicken, if desired)

Recipe

  • 1 coat chicken in flour.
  • 2 heat butter in large frying pan.
  • 3 brown chicken, then take out and keep warm.

  • 5 saute until brown.
  • 6 add marsala wine to deglaze.
  • 7 add water and bouillon cubes.

  • 2 cups cooked rice
  • 1/4 cup carrot, chopped
  • 1/2 cup sweet pepper, chopped (red, green, yellow peppers to make colorful)
  • 1 tablespoon green onion, chopped
  • 1/4 cup corn
  • 1/4 cup peas
  • 1 teaspoon salt
  • 1 tablespoon light soy sauce
  • 1 pinch vegetable seasoning (mushroom seasoning)
  • 2 tablespoons extra virgin olive oil
  • 1 shallot, chopped
  • 1/4 cup carrot, chopped

Recipe

  • 1 step 1: heat pan with oil and cook shallots until brown. next, add rice and stir well, then add salt. cook about 5 minutes, then add vegetables. season with soy sauce and vegetable seasoning. cook another 6-8 minutes over medium heat. then add green onions. season if needed.
  • 2 serve piping hot. serves 2.

  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon oregano
  • 3 lbs chicken parts (skinless)
  • 1/4 cup butter
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can water or 1 (10 1/2 ounce) can milk
  • 10 ounces cooked noodles

Recipe

  • 1 combine flour, salt and oregano in a paper bag.
  • 2 add chicken, a few pieces at a time, and shake until well coated.
  • 3 brown chicken in butter.; transfer chicken to a 9 x 13 inch baking dish.
  • 4 blend any remaining flour mixture into drippings; stir in soup, then water.
  • 5 heat, stirring until smooth; pour sauce over chicken.
  • 6 bake, uncovered, at 350 degrees about 1 hour or until chicken is tender;. baste with sauce once or twice.

Decadently Creamy Shrimp And Scallop Scampi With Orzo

Ingredients

  • Servings: 6
  • 2 cups clam broth
  • 1 cup water
  • 4 garlic cloves, minced
  • 5 mixed mushrooms, sliced
  • 1 lb shrimp, deveined and peeled
  • 1/2 lb scallops
  • 1 1/2 cups orzo pasta
  • 2 teaspoons old bay seasoning or 2 teaspoons bahama mama seasoning
  • salt
  • pepper
  • 3 tablespoons butter
  • 1 cup heavy cream
  • 3/4 cup shredded parmesan cheese, fontina or 3/4 cup asiago cheese

Recipe

  • 1 melt butter in pan and add garlic and orzo. add some of the bahama mama seasoning (i prefer it to the old bay). cook about 5 minutes or until orzo turns a golden brown. be careful not to burn it.
  • 2 add clam broth and water. cover and cook for about 15 minutes stirring occassionally to keep from clumping.
  • 3 add mushrooms, shrimp, and scallops. stir and cover for 5 minutes.
  • 4 stir in heavy cream and cheese. cover and cook for about 5 more minutes.
  • 5 add salt, pepper, or more of the bahama mama seasoning to taste.

Easy Chicken Or Turkey Pot Pie

Ingredients

  • 1 medium carrot, peeled and sliced
  • 1 stalk celery, chopped
  • 1 medium onion, finely chopped
  • 1/2-3/4 teaspoon dried thyme
  • 1 (10 ounce) can mushrooms, well drained (whole or sliced, squeeze out excess moisture with hands)
  • 1 tablespoon fresh minced garlic
  • 1 teaspoon ground black pepper
  • 3 -4 tablespoons butter or 3 -4 tablespoons margarine
  • 2 1/2 cups cubed cooked chicken (or turkey)
  • 1 tablespoon all-purpose flour
  • 1 teaspoon all-purpose flour
  • 1 (10 3/4 ounce) can condensed golden mushroom soup, undiluted
  • 1 1/2 cups frozen cut green beans, cooked and drained

  • 1 (9 inch) pastry for double-crust deep dish pie

Recipe

  • 1 in a large skillet melt butter over medium heat.
  • 2 add in carrot, celery, onion and thyme; cook stirring until just crisp-tender.
  • 3 add in mushrooms fresh garlic,and black pepper; cook stirring for 2 minutes.; remove skillet from heat.
  • 4 place the cubed chicken or turkey in a bowl sprinkle with 1 tablespoon plus 1 teaspoon flour and toss well to coat.
  • 5 to the skillet add in the floured chicken or turkey, undiluted soup and green beans to the onion mixture; mix very well with a spoon to combine.
  • 6 line the bottom of the pie plate with pastry.
  • 7 add in the chicken or turkey mixture.
  • 8 place the remaining pastry on top; seal and flute.
  • 9 slice a couple of slits on top to allow steam to escape.
  • 10 brush lightly with table cream or milk.
  • 11 cover the edges loosley with foil.
  • 12 place the pie plate on a baking sheet.
  • 13 bake bottom-oven rack for 55-60 minutes or until golden brown.

Fried Wontons

Total Time: 1 hr 5 mins Preparation Time: 35 mins Cook Time: 30 mins

Ingredients

  • 100 g minced chicken
  • 50 g frozen shrimp, thawed
  • 4 pieces chinese mushrooms
  • 2 tablespoons chestnuts, chopped
  • 1 tablespoon spring onion
  • 2 tablespoons sesame oil
  • 2 tablespoons light soya sauce
  • salt
  • pepper
  • 50 -60 square shaped wonton skins

Recipe

  • 1 mix all the ingredients for the filling together.
  • 2 place the wanton squares on the working surface.
  • 3 place one tbsp of the filling in the centre of each wanton skin.
  • 4 dip the edges of the wanton skin in water or a beaten egg.
  • 5 fold into a triangle.
  • 6 press to seal.
  • 7 heat oil.
  • 8 fry the wrapped wanton until golden (about 2 minutes).
  • 9 turn over.
  • 10 drain.
  • 11 serve hot with chilly sauce or sweet and sour sauce.

Eggplant (aubergine) Dip

Ingredients

  • 3 cups cubed eggplants
  • 1 medium onion, chopped
  • 1/3 cup finely chopped sweet red pepper
  • 1 (4 1/2 ounce) jar sliced mushrooms, drained
  • 4 garlic cloves, minced
  • 1/3 cup olive oil or 1/3 cup vegetable oil
  • 1 (6 ounce) jar stuffed olives, drained and chopped
  • 1 (6 ounce) can tomato paste
  • 2 tablespoons red wine vinegar
  • 1 1/2 teaspoons sugar
  • 1 teaspoon salt
  • 1/2 teaspoon dried oregano
  • hot pepper sauce
  • pita bread, wedges or tortilla chips

Recipe

  • 1 in a large skillet, combine the eggplant, onion, red pepper, mushrooms, garlic and oil. cover and cook over medium heat for 10 minutes or until tender. stir in the next seven ingredients; bring to a boil. reduce heat; cover and simmer for 20-30 minutes or until flavors are blended. serve warm or at room temperature with pita wedges or tortilla chips.

Crockpot Cantonese Tempeh

Ingredients

  • Servings: 6
  • 2 (8 ounce) packages tempeh
  • 1 medium onion, sliced
  • 1 green bell pepper, sliced
  • 1 red bell peppers or 1 yellow bell pepper, sliced
  • 16 ounces mixed mushrooms, sliced
  • 2 large carrots, julienned
  • 2 (15 ounce) cans diced tomatoes
  • 1 (3 ounce) can tomato paste
  • 2 cups vegetable broth
  • 3 tablespoons brown sugar
  • 2 tablespoons vinegar
  • 1/2 teaspoon salt
  • 2 teaspoons worcestershire sauce, vegan variety
  • 3 tablespoons cornstarch
  • 3 tablespoons water

Recipe

  • 1 mix all ingredients, except cornstarch and water, together in crockpot.
  • 2 cover and cook on low for 6 hours.
  • 3 dissolve cornstarch in water and stir into crockpot to thicken sauce into a glaze. (you may find that you need a little more or a little less cornstarch to achieve the desired thickness).
  • 4 cover and cook another 20 minutes or until sauce thickens.
  • 5 serve over rice.

Fried Veggie Brown Rice ( Vegan )

Ingredients

  • Servings: 6
  • 1 (12 ounce) package silken extra firm tofu, crumbled
  • 1 tablespoon vegetable oil
  • 1 teaspoon fresh ginger, grated
  • 1 teaspoon garlic, minced
  • 4 cups cooked brown rice, cooled
  • 1/2 cup bell pepper, red or green, diced
  • 1 cup fresh mushrooms, diced
  • 1 cup scallion, chopped
  • 1 cup fresh bean sprout
  • 1 tablespoon light soy sauce

Recipe

  • 1 heat oil in a non-stick pan or wok.
  • 2 add crumbled tofu.
  • 3 saute for 2-3 minutes; add ginger and garlic.
  • 4 cook 1 minute.
  • 5 add rice, vegetables and soy sauce.
  • 6 cook until vegetables are tender/crisp and rice is hot.

  • 1 cup butter
  • 2 cups chopped onions
  • 2 cups chopped celery
  • 1 lb sausage, cooked and drained (optional)
  • 1/4 cup chopped fresh parsley
  • 12 ounces sliced mushrooms
  • 12 cups dry bread cubes
  • 1 teaspoon poultry seasoning
  • 1 1/2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried marjoram
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon ground black pepper
  • 4 1/2 cups chicken broth, as needed (i usually use about 3 cups)

  • 1 note: this recipe is designed for use in a standard 4 quart slow cooker. larger slow cookers will also work.
  • 2 melt butter or margarine in a skillet over medium heat. cook onion, celery, mushroom, and parsley in butter, stirring frequently, until onion is translucent.
  • 3 spoon cooked vegetables (and optional cooked sausage, if using) over bread cubes in a very large mixing bowl. season with poultry seasoning, sage, thyme, marjoram, and salt and pepper. pour in enough broth to moisten (don't use full amount listed at first, more can be added as needed), and mix in eggs.
  • 4 spray slow cooker with cooking spray. transfer mixture to slow cooker, and cover. cook on high for 45 minutes, then reduce heat to low, and cook for 4 to 8 hours. (i find that four hours is plenty with the newer slow cookers. cook time will depend upon your slow cooker).
  • 5 oven option: prepare as directed using the full amount of broth. transfer to a 9x13 inch baking dish or other large casserole dish. bake uncovered for 45 minutes to 1 hour at 350 degrees f (175 degrees c).

  • 1/2 cup water
  • 1/4 cup cold water (to bloom gelatin)
  • 10 ounces mushrooms, wiped clean, stems trimmed, halved if small and quartered if large

  • 1 tablespoon powdered unflavored gelatin

  • 1 season meat with kosher salt. place on wire rack in rimmed baking sheet, and let rest at room temperature for 1 hour.
  • 2 meanwhile, bring wine to simmer in large saucepan over medium-high heat. cook until reduced to 2 cups, about 15 minutes. using kitchen twine, tie parsley sprigs, thyme sprigs, and bay leaves into bundle.
  • 3 pat beef dry with paper towels and season generously with pepper. tie three pieces of kitchen twine around each piece of meat to keep it from falling apart.
  • 4 adjust oven rack to lower middle position and heat oven to 300°f cook bacon in large dutch oven over medium-high heat, stirring occasionally, until crisp, 6-8 minutes. using slotted spoon, transfer bacon to paper-towel lined plate and reserve. pour off all but 2 tbsp of bacon fat; return dutch oven to medium-high heat and heat until fat begins to smoke. add beef to pat and brown on all sides, 8-10 minutes total. transfer beef to large plate and set aside.
  • 5 reduce heat to medium; add onion and cook,, stirring occasionally, until beginning to soften, 2-4 minutes. add garlic, flour, and reserved bacon; cook stirring constantly, until fragrant, about 30 seconds. add reduced wine, broth, and herb bundles, scraping bottom of pan with wooden spoon to loosen browned bits. return roast and any accumulated juices to pot; increase heat to high and bring liquid to simmer, then place large sheet of foil over pot and cover tightly with lid. set pot in oven and cook, using tongs to turn beef every hour, until dinner fork slips easily in and out of meat, 2 1/2 -3 hours, adding carrots to pot after 2 hours.
  • 6 while meat cooks, bring pearl onions, butter, sugar and 1/2 cup water to boil in large skillet over medium-high heat. reduce heat to medium, cover, and cook until onions are tender, 5-8 minutes. uncover, increase heat to medium-high heat, and cook until all liquid evaporates, 3-4 minutes. add mushrooms and 1/4 teaspoons table salt; cook, stirring occasionally, until vegetables are browned and glazed 8-12 minutes. remove from heat and set aside. place remaining 1/4 cup cold water in small bowl and sprinkle gelatin on top.
  • 7 transfer beef to cutting board; tent with foil to keep warm. allow braising liquid to settle for about 5 minutes, then using wide shallow spoon, skim fat off surface. remove herb bundle and stir in onion-mushroom mixture. bring liquid to simmer over medium-high heat and cook until mixture is slightly thickened and reduced to 3 1/4 cups, 20-30 minutes. season sauce with salt and pepper. add softened gelatin and stir until completely dissolved.
  • 8 remove kitchen twine from meat and discard. using chef's or carving knife, cut meat against grain into 1/2" thick slices. divide meat among warmed bowls or transfer to platter; arrange vegetables around meat, pour sauce on top, and sprinkle with minced parsley. serve immediately.
  • 9 to make ahead: follow recipe to point where gelatine is sprinkled on top of cold water. omit this step. place the meat back into reduced sauce, cool it to room temperature, cover it, and refrigerate for up to 2 days. to serve slice the beef and arrange it in a 13 x 9-inch baking dish. bring the sauce to a simmer and stir in the gelatin until completely dissolved. pour the war m sauce over the meat, cover it with aluminum foil and bake it in a 350°f oven until heated through, about 30 minutes. serve with boiled potatoes, buttered noodles or steamed rice.

  • 1 defrost lobster tail in fridge for 24hrs.
  • 2 remove thin underside membrane from lobster-tails with scissors.
  • 3 push bamboo skewer length wise through tail to prevent curling.
  • 4 place colander over boiling water in large pot, or use steamer.
  • 5 place lobster tails in colander; place vegetables on top and around tails.
  • 6 combine soy sauce, broth, and water; brush over tails and vegetables.
  • 7 cover pot; steam 20 minutes or until vegetables are crisp-tender and lobster meat loses translucency and is opaque.

Crockpot Guinness Beef Stew

Total Time: 3 hrs 25 mins Preparation Time: 25 mins Cook Time: 3 hrs

Ingredients

  • Servings: 2
  • 1 1/2 lbs stewing beef
  • sea salt
  • ground pepper
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • 1 (14 ounce) can beef broth
  • 1 cup guinness draught
  • 8 ounces baby portabella mushrooms
  • 1/2 vidalia onion
  • 2 bay leaves
  • 1 teaspoon dried thyme

Recipe

  • 1 heat olive oil in pan. cut beef into 1" cubes, add to hot oil. season beef cubes with sea salt and freshly ground pepper to taste.
  • 2 while beef is browning, coarsely chop vidalia onion and put in crockpot. add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths.
  • 3 once beef is fully cooked, dump it into the crockpot, juices and all.
  • 4 add beer, cover, and cook on high for 3-4 hours.
  • 5 remove bay leaves before serving.

  • 1 heat mushroom soup and cream cheese, stir until smooth.
  • 2 add gelatin to cold water and soften 5 minutes.
  • 3 add gelatin mixture to soup mixture.
  • 4 add celery, onion, mayonnaise, crabmeat and curry powder, mixing well.
  • 5 pour into 4-cup cold mold (oil or spray mold with pam before).
  • 6 chill overnight.
  • 7 unmold onto serving plate and decorate with sprigs of parsley.

  • 1 cook pasta according to package directions. meanwhile, in a large skillet, cook bacon over medium heat until crisp.

  • 1/3 cup whole grain rice (i use lundberg wild blend rice)
  • 4 ounces kale, de-stemmed and chopped
  • 1/2 teaspoon ginger, minced

  • 1 onion, chopped
  • 1/2 cup sliced mushrooms
  • 1/2 teaspoon oil (to coat pan)
  • 1/2 cup frozen peas
  • 1 (15 ounce) can low-sodium chickpeas, drained and rinsed
  • 2 eggs (optional)
  • 2 tablespoons low sodium soy sauce
  • 1 teaspoon sesame oil

Recipe

  • 1 cook rice according to package directions. when done, set aside.
  • 2 while rice is cooking, remove the center stem from the kale and discard. wash and chop kale leaves and set aside. if you don't know how to remove the stems from kale, google: remove kale stems.
  • 3 chop ginger, garlic, celery, onion and mushrooms and set aside.
  • 4 coat large covered non-stick frying pan or dutch oven (at least 5 quarts) with oil. add ginger, garlic, celery, onion, mushrooms and peas and sauté.

  • 4 cups chopped cooked chicken
  • 1 large chopped onion
  • 1 large chopped green bell pepper
  • 1 (10 ounce) can cream of chicken soup
  • 1 (10 ounce) can cream of mushroom soup
  • 1 (10 ounce) can diced tomatoes, and green chiles (ro-tel)
  • 2 minced garlic cloves
  • 2 teaspoons chili powder
  • 12 (6 inch) fajita size corn tortillas
  • 3 cups shredded sharp cheddar cheese

Recipe

  • 1 stir together first 8 ingredients in a large bowl. tear tortillas into 1 inch pieces; divide into thirds. layer one-third of tortilla pieces in a lightly greased 6 quart slow cooker. top with one-third of chicken mixture and 1 cup of cheese.
  • 2 repeat layers twice.
  • 3 cover and cook on low for 3 1/2 hours or until bubbly and edges are golden brown. uncover and cook on low 30 minutes.
  • 4 serve with salad and blue corn chips on the side for a pretty presentation.

Giant Puffball Mushroom Crust Pizza

  • 1 giant puffball wild mushroom
  • 2 tablespoons olive oil
  • 2 tablespoons pizza sauce
  • 1/4 cup shredded pizza cheese
  • your favorite pizza toppings

Recipe

  • 1 wash the giant puffball and remove the outer leathery skin like layer. if you see the puffball has begun to spore, throw it away. wash off any left over dirt.
  • 2 slice the giant puffball into 3/4 inch slices (the best you can) i like to use the slices in the middle because they are bigger. use 2 slices for the recipe. freeze or dehydrate any remaining puffball immediately or it will not be good the next day.
  • 3 lightly brush olive oil on both sides of each slice. place the slices on your gas grill. turn the slices over carefully. they should be slightly crispy on both sides and you should be able to see the grill marks. puffballs are very moist and spongy and it is necessary to remove some of the moisture with this process.
  • 4 lightly spread tomato pizza sauce (you may also use pesto sauce on your pizza or make sauceless pizza. if you use sauce on your pizza, place a very small amount because the mushroom will still be very moist.
  • 5 cover the top of your pizza with shredded cheese and your favorite toppings. the amount of toppings will depend on the size of your slices.
  • 6 place the slices on a sheet pan covered with tin foil.
  • 7 bake in a 400 degree preheated oven until the cheese turns slightly brown on the top and all of your toppings are cooked through. again, the length of cooking time depends on how many topings you put.

  • 1 in a large bowl mix chicken or turkey, veggies, cream soups, salt, pepper , garlic powder and milk; stir well. spoon mixture evenly into one large casserole dish or 4 small round baking dishes.
  • 2 roll out pie crust dough large enough to fit the top of the bowl. press dough against sides of bowl. bake @ 425 for 30 - 45 minutes or until crust is golden. place cookie sheet on bottom rack of oven to catch any drips.

  • 1/4 cup wild rice (read *note)
  • 1/2 cup long grain rice
  • vegetable broth, to cook rice (or chicken broth)

  • 3 shallots, peeled and sliced
  • 5 ounces fresh mushrooms
  • 5 ounces fresh spinach, chopped
  • 1/4 teaspoon freshly grated nutmeg
  • salt, to taste
  • 1/4 teaspoon freshly grated black pepper

  • 1 cook rices separately in vegetable or chicken broth according to package directions. (*note: wild rice usually take close to an hour to cook. if you use long grain *brown* rice then both rice varieties can be cooked together; consequently one less pan to clean).
  • 2 in a skillet on medium heat, melt the butter and sautè the shallots until just they begin to soften. add the mushrooms and continue cooking for another 1-2 minutes or *just* until the mushrooms begin to soften. do not overcook!
  • 3 when both rices are done cooking, stir in the chopped spinach and sautèed vegetable mixture.
  • 4 heat through about 1 minute, season with nutmeg, salt and pepper.

  • 5 large portobello mushroom caps
  • 2 tablespoons finely chopped fresh rosemary leaves, a couple of sprigs
  • salt and pepper
  • 1 cup diced stale chewy bread
  • 2 plum tomatoes, chopped
  • 2 celery ribs, from the heart with green tops very thinly sliced
  • 1/2 small onion, chopped
  • couple handfuls flat leaf parsley, leaves chopped
  • 1 lemon, juiced
  • 1 small chunk parmigiano-reggiano cheese, to shave on salad

Recipe

  • 1 preheat grill pan over medium-high heat.
  • 2 drizzle extra-virgin olive oil over 4 mushrooms and season with rosemary and salt and pepper. grill 5 minutes on each side then remove from grill.
  • 3 while the portobellos cook, cut the remaining portobello into 4 thick slices then thinly slice each piece across. mix the shaved fresh mushrooms with bread, tomatoes, celery, onion and parsley and dress the salad with the juice of 1 lemon and about 1/4 cup extra-virgin olive oil. toss and season the salad with salt and pepper, to taste.
  • 4 top grilled mushrooms with mounds of the salad and shavings of parmigiano-reggiano.
