Ingredients

  • Servings: 4
  • 500 g round steaks, cut into thin thins
  • 1 tablespoon oil
  • 1 clove garlic, crushed
  • 1 small onion, finely chopped
  • 10 fresh mushrooms, sliced
  • 1 green pepper, chopped
  • 1 teaspoon basil
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 2 cups tomatoes, pureed or 2 cups tomato sauce
  • 1/2 teaspoon pepper
  • 300 -400 g pasta, cooked
  • 1/2 cup parmesan cheese (optional)

Recipe

  • 1 in a large skillet or a wok, stir fry beef strips in hot oil over high heat for 2 minutes.
  • 2 add garlic, onion, and spices and cook for 2 minutes longer, until beef is no longer pink.
  • 3 drain and then return to pan.
  • 4 stir in tomatoes and simmer for 10 minutes.
  • 5 add mushrooms and green pepper and cook for 5 minutes.
  • 6 serve over cooked pasta and top with parmesan cheese if desired.

Great-grandfather's Beef Stroganoff

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • Servings: 4
  • 1 lb filet mignon or 1 lb rib eye
  • 1 -2 tablespoon butter
  • 1 lb fresh mushrooms, sliced
  • 1/2 cup cooking sherry
  • 1 cup beef stock or 1 cup beef bouillon
  • 2 tablespoons hot water
  • 1 tablespoon cornstarch
  • 1 teaspoon black pepper
  • 2 cups wide egg noodles, cooked
  • 1 cup sour cream
  • 1/2 cup slivered almonds

Recipe

  • 1 closely trim steak and slice into thin slices.
  • 2 pepper meat, then brown in butter in skillet.
  • 3 when meat is browned, add sherry and stock or bouillon, bring to a boil and immediately reduce to simmer.
  • 4 add mushrooms and cook until mushrooms are done, but not shriveled.
  • 5 dissolve cornstarch in hot water and add to broth, stirring until broth thickens*slightly*.
  • 6 to serve, place seperate bowls of noodles, meat and sauce, sour cream, and slivered almonds on table (you can garnish sour cream with chopped parsley if desired).
  • 7 to eat, layer first noodles, then beef, then sour cream and sprinkle with almonds.

Greek Style Pizza

Ingredients

  • 1 prepared pizza crust
  • 1 1/2 cups tomato sauce
  • 1/2 teaspoon sugar
  • 1/2 teaspoon dried oregano, crushed
  • 1/2 cup mixed mushrooms, sliced
  • 1/2 red onion, diced
  • 2 tomatoes, sliced
  • 1/2 cup greek olive, sliced
  • 1 cup greek feta cheese, crumbled
  • 1 teaspoon olive oil
  • 1/2 teaspoon salt, to taste
  • 1/2 teaspoon pepper
  • 1/2 cup baby spinach leaves (optional)

Recipe

  • 1 preheat the oven to 375ºf. roll out the crust to desired thickness.
  • 2 combine tomato sauce and sugar. add crushed oregano.
  • 3 spread on pizza shells and top with remaining ingredients, (add spinach leaves).
  • 4 drizzle with olive oil and sprinkle salt and pepper to taste.
  • 5 place it into the oven for 15 to 20 minutes or until crust is crisp and cheese has melted.

French Onion Lamb Chop Casserole

Ingredients

  • 6 lamb loin chops, cut 3/4 inch thick
  • 1 tablespoon vegetable oil
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 1/2 cup milk
  • 1/2 cup sour cream
  • 1/2 teaspoon seasoned salt
  • 1/4 teaspoon black pepper
  • 24 ounces hash brown potatoes, frozen
  • 1 cup shredded sharp cheddar cheese
  • 1 (2 7/8 ounce) can french fried onions

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 in 12 inch skillet brown chops in hot oil. remove chops; set aside.
  • 3 in same skillet combine soup, milk, sour cream, seasoned salt and pepper.
  • 4 stir in potatoes, 1/2 cup of the cheese and half (3/4 cup) of the fried onions.
  • 5 pour mixture into a 3 quart rectangular baking dish. arrange browned chops on top.
  • 6 bake, covered, for 40 minutes.
  • 7 uncover and sprinkle with the remaining cheese and fried onions. bake for 5 minutes more or until cheese is melted.

Chicken In Stilton

Ingredients

  • Servings: 6
  • 1/2 lb mushroom
  • 1 clove garlic, crushed
  • 1 onion, chopped
  • 6 pieces chicken (i use breasts)
  • 1/2 bottle wine
  • 2 ounces butter
  • 1/2 pint heavy cream
  • 4 ounces stilton cheese (grated, or more if desired)
  • 1 bay leaf
  • 1 -2 ounce flour
  • 2 tablespoons chopped fresh parsley

Recipe

  • 1 chop onion, crush garlic and fry in butter, put into casserole dish with the chicken pieces, bay leaf, mushrooms and wine.
  • 2 season to taste.
  • 3 cook in 325 oven for 20 minutes or until cooked.
  • 4 sauce: put some butter in a pan and add flour to make a roux, add salt and pepper to taste.
  • 5 strain wine from the casserole and keep the chicken warm.
  • 6 add wine to the roux with the cream and stir constantly on a very low heat until smooth.
  • 7 add the stilton, pour over top of chicken and sprinkle with parsley.
  • 8 enjoy.

Chicken In Red Wine Sauce

Ingredients

  • 3 lbs chicken pieces
  • 2 tablespoons butter
  • 1/4 lb fresh mushrooms, halved
  • 1/4 cup shallot, chopped
  • 1 teaspoon garlic clove, minced
  • 2 tablespoons flour
  • 1 1/2 cups dry red wine
  • 1/2 cup chicken broth
  • 2 tablespoons chicken broth
  • 1 bay leaf
  • 1 fresh parsley sprig
  • 2 fresh thyme sprigs or 1/4 teaspoon dried thyme
  • salt & freshly ground black pepper

Recipe

  • 1 season the chicken with salt and pepper on both sides. heat butter in a large skillet over medium heat. add chicken pieces, skin side down. cook until chicken in golden brown, about 6 or 7 minutes. turn chicken and cook an additional 5 minutes.
  • 2 add the mushrooms, shallots, and garlic and stir to blend. cook about 1 minute, sprinkle in flour. add wine and 1/2 cup of broth. bring to a boil. add the bay leaf, parsley, and thyme. add salt and pepper to taste. cover, then cook 15 to 20 minutes.
  • 3 remove chicken and mushrooms to a serving dish. strain sauce with remaining solids over the chicken, pressing to release all juices. swirl 2 tablespoons butter around any juices remaining in skillet. strain this over chicken as well and serve.

French Onion Portobello Brisket

Ingredients

  • Servings: 9
  • 1 (4 lb) beef brisket
  • 1 3/4 cups sliced baby portabella mushrooms
  • 1 small red onion, sliced
  • 2 garlic cloves, minced
  • 2 tablespoons butter
  • 1 (10 1/2 ounce) can condensed french onion soup
  • 1/4 cup dry wine or 1/4 cup beef broth
  • 1/2 teaspoon fresh coarse ground black pepper
  • fresh sage

Recipe

  • 1 cut brisket in half; place in a 5 qt slow cooker.
  • 2 in a saucepan, saute the mushrooms, onion, and garlic in butter for 3-5 minutes or until onion is crisp-tender.
  • 3 add in the soup, wine, and pepper; mix well.
  • 4 pour mushroom mixture over beef.
  • 5 cover and cook on low for 8-10 hours or until meat is tender.
  • 6 garnish with sage, if desired.

Easy Spicy Vegetarian Chili

  • 1 teaspoon olive oil
  • 2 medium onions, chopped
  • 1 medium green pepper, chopped
  • 1 medium red pepper, chopped
  • 3 garlic cloves, minced
  • 2 cups fresh mushrooms, sliced
  • 2 cups red kidney beans, cooked (a 540ml can, drained)
  • 2 cups chickpeas, cooked (a 540ml can, drained)
  • 1/2 cup bulgur or 1/2 cup couscous, rinsed
  • 796 ml diced tomatoes, canned
  • 1 cup salsa, medium
  • 1/2 cup water
  • 1 tablespoon chili powder
  • 1 teaspoon dried basil
  • 1/2 teaspoon ground pepper
  • 1/2 teaspoon oregano
  • 1/2 teaspoon cumin
  • 1/4 teaspoon cayenne
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon sugar
  • 1 cup canned corn niblet (frozen works well)

  • 1 heat oil in a large pot, saute onions, peppers and garilc for 5 minutes on medium heat.
  • 2 add mushrooms, saute 4-5 minutes.
  • 3 add remaining ingredients except corn.
  • 4 increase heat to high to bring to a boil.
  • 5 decrease heat to medium and simmer, covered, for 25 minutes, stirring occasionally.
  • 6 stir in corn, simmer until heated through.
  • 7 makes about 10 cups or 6-7 servings of 1 1/2 cups.

Greece Rice

Ingredients

  • 750 g rice
  • 1 cup bell pepper, chopped
  • 2 cups green peas, cooked
  • 2 cups corn, cooked
  • 1 cup mushroom, cooked
  • 100 g chicken breasts, cooked and chopped
  • 4 cups chicken broth
  • 150 g cooking oil
  • 1 cup onion, chopped
  • 1 teaspoon saffron, grounded
  • 50 g butter
  • salt and pepper, pinch

Recipe

  • 1 sauté the onion with oil and sauté the uncooked rice with it then add chicken broth, saffron and salt cook over low heat until the excess water evaporates and rice is done then add all ingredients above ( peas, bell pepper, mushroom, corn) at the end pour melted butter over the rice and serve.

French Onion And Wild Mushroom Soup

  • 4 tablespoons butter
  • 2 tablespoons extra virgin olive oil
  • 3 large onions, thinly sliced
  • 1 bay leaf
  • 1 1/2 teaspoons ground thyme
  • salt and pepper
  • 1 (32 ounce) chicken broth or 1 (32 ounce) beef broth
  • 1 (1 ounce) dried wild mushrooms, mixed
  • 2 cups water
  • 1/4-1/3 cup dry sherry (eyeball it)
  • 4 thick slices crusty bread
  • 1 large garlic clove, halved
  • 1/2 lb gruyere cheese, shredded

Recipe

  • 1 in a heavy soup pot, melt the butter with the olive oil, 2 turns of the pan, over medium-heat. stir in the onions, bay leaf and thyme. season with salt and pepper. cook until the onions are softened and browned, 25 minutes.
  • 2 meanwhile, in a large saucepan, bring the chicken broth, mushrooms and 2 cups water to a boil. lower the heat and simmer for 15 minutes. using a slotted spoon, remove the mushrooms and slice.
  • 3 preheat the broiler. pour the sherry into the onions and cook over medium heat, scraping up any browned bits. stir in the mushrooms and hot broth.
  • 4 toast the bread under the broiler, rub with the garlic and top with the cheese. broil until melted. ladle the soup into bowls and serve with the toasts.

  • 1 (14 ounce) can beef broth
  • 4 tablespoons butter or 4 tablespoons margarine
  • 1 (12 ounce) package egg noodles
  • black pepper (to taste)

Recipe

  • 1 brown ground beef.
  • 2 add onions during browning.
  • 3 drain grease.
  • 4 add cans of cream of mushroom soup.
  • 5 add packets of onion soup mix.
  • 6 over low-medium heat, stir mixture until smooth.
  • 7 add mushrooms.
  • 8 add beef broth.
  • 9 add black pepper.
  • 10 stir thoroughly until well-mixed.
  • 11 reduce heat to simmer.
  • 12 simmer for 20-30 minutes, covered.
  • 13 cook egg noodles in separate pot, according to directions.
  • 14 while noodles are cooking, add butter or margarine.
  • 15 stir and cover, continuing to simmer.
  • 16 drain noodles, and return to pot.
  • 17 add ground beef/soup/mushroom mixture to noodles, and stir thoroughly.
  • 18 serve and enjoy.

Burgundy Venison

Ingredients

  • Servings: 4
  • 2 sprigs fresh parsley
  • 2 sprigs fresh thyme
  • 2 sprigs fresh tarragon
  • 3 tablespoons sunflower oil
  • 8 slices bacon
  • 2 onions, diced
  • 2 lbs venison, cut into 2-inch chunks
  • 2 tablespoons flour
  • 2 cups burgundy wine
  • 2 cups beef stock
  • 3 garlic cloves, crushed
  • 2 tablespoons orange zest, grated (approximate, use 1 orange)
  • 6 juniper berries, crushed
  • salt
  • pepper
  • 12 large mushrooms
  • 2 tablespoons fresh parsley, minced

Recipe

  • 1 make a bouquet garni by placing the parsley, thyme and tarragon sprigs on a square of cheesecloth. bring the corners up over them and tie together. set aside.
  • 2 heat oil in a dutch oven or heavy pot over medium heat.
  • 3 add bacon and cook until crisp, about 5 minutes on each side.
  • 4 remove and drain on paper towels.
  • 5 add onions and saute until browned, about 3-5 minutes.
  • 6 add venison and cook for 2-3 minutes, turning once or twice.
  • 7 sprinkle flour over meat and onions, and stir until coated.
  • 8 cook for 2 minutes.
  • 9 stir in wine, stock, garlic, orange zest, and juniper berries.
  • 10 bring to a boil.
  • 11 reduce heat.
  • 12 add bouquet garni, salt and pepper.
  • 13 cover and simmer until meat is tender and sauce is thick, about 1 1/2 hours. if too thick, add a little more stock or some water.
  • 14 add bacon and mushrooms.
  • 15 uncover and cook for 20 minutes.
  • 16 remove bouquet garni.
  • 17 serve with a sprinkling of minced parsley.

Easiest Shrimp Etouffe

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1/4 cup butter
  • 1 (15 ounce) can cream of mushroom soup
  • 1 (15 ounce) can cream of celery soup
  • 1/2 cup milk
  • 1 green bell pepper, julienned
  • 1 onion, chopped
  • 1 lb shrimp or 1 lb crawfish
  • salt and pepper, to taste

Recipe

  • 1 sautee pepper and onion in butter, in sautee pan, until onions are clear.
  • 2 while sauteeing vegetables, add cans of cream of mushroom and cream and celery to pot and let simmer for 10 minute.
  • 3 add sauteed vegetable and shrimp or crawfish to soup mixture. whisk in milk to desired consistency, up to 1 celsius let simmer 10 minute.
  • 4 serve over rice with baked french bread, and add tony chacere's to taste.

Ground Beef And Cream Cheese On Toast

  • 1 1/2 lbs ground beef
  • 2 tablespoons chopped onions
  • 8 ounces cream cheese
  • 10 1/2 ounces cream of mushroom soup
  • 1 cup whole kernel corn, drained
  • salt
  • pepper
  • garlic powder

Recipe

  • 1 brown ground beef and onion until the red is gone.
  • 2 drain.
  • 3 add the cream cheese, soup, corn, and spices.
  • 4 all 1/4 -1/2 cup milk if too thick.
  • 5 serve over buttered toast.

Easy Spinach & Mushroom Calazone

Ingredients

  • 1 (13 ounce) package pizza dough
  • 10 ounces frozen chopped spinach (thawed)
  • 1/2 cup sliced mushrooms
  • 1 tablespoon minced garlic
  • 4 ounces cream cheese (i used 1/3 less fat variety)
  • 1/2 cup grated parmesan cheese
  • salt & pepper, for taste (to season)
  • 1 -2 tablespoon melted butter (for brushing on top of calazones) or 1 egg (for brushing on top of calazones)
  • 1 (8 ounce) jar marinara sauce (used to dipped calazones in!)

Recipe

  • 1 heat thawed spinach in a skillet on medium heat. add garlic, salt, and pepper-stir together. add cream cheese and 1/4 cup of the parmesan cheese and stir until melted. add sliced mushrooms and cook 5 minutes more. remove from heat and let stand.
  • 2 grease a pizza/cookie sheet. roll out the pizza dough from the pkg. stretch the dough to just fit the cooking sheet. cut the dough into 4 rectangles.
  • 3 divide spinach mixture into 4 portions. drop one portion onto each pizza dough rectangle. take one corner of the dough and pull it to the opposite corner to enclose the spinach mixture. pinch close to form a triangle. brush tops with either melted butter or egg . sprinkle tops with remaining parmesan cheese.
  • 4 bake calazones for 15 minutes or until golden brown. cool for 5 minutes before serving. use marinara sauce as a side to dip your calazone in!

Easiest Swiss Steak

Total Time: 8 hrs 15 mins Preparation Time: 15 mins Cook Time: 8 hrs

Ingredients

  • Servings: 6
  • 2 -3 lbs tenderized round steaks or 2 -3 lbs beef eye round
  • flour
  • 1 (10 3/4 ounce) can cream of mushroom soup
  • 2 (10 3/4 ounce) cans campbell's golden mushroom soup
  • 1 (14 1/2 ounce) can beef broth

Recipe

  • 1 coat the meat in flour.
  • 2 brown both sides of the meat in a greased pan; don't cook all the way through, just get it browned.
  • 3 mix all the soups and broth together.
  • 4 transfer meat into crockpot or pan for the oven.
  • 5 pour soups/broth mixture on top.
  • 6 cook until done and meat is really tender. this takes about 8-10 hrs in crock pot on low or 3-4 hours in oven at 300.
  • 7 serve over mashed potatoes or noodles.

Easy Stove Top Stuffing Saute

Total Time: 25 mins Preparation Time: 25 mins

Ingredients

  • Servings: 4
  • 2 large onions, coarsely chopped
  • 2 -3 stalks celery, coarsely chopped
  • 1 small green pepper, coarsely chopped
  • 1 tablespoon minced garlic (or to taste)
  • 1 -2 cup canned mushroom slices, drained
  • 1/2 cup butter or 1/2 cup margarine
  • 1 3/4 cups chicken broth (homemade or store bought)
  • 1 1/2 cups canned corn niblets, drained (i just use one whole can)
  • 2 (120 g) boxes stove top chicken flavor stuffing mix
  • black pepper
  • salt (optional)

Recipe

  • 1 in an extra large fry pan or dutch oven melt butter and sauté the onions, garlic, celery, and green pepper until soft (about 5-6 minutes).
  • 2 slowly add in the chicken broth, mushrooms (if using) and corn niblets; cover and simmer for about 5-6 minutes.
  • 3 add in black pepper to taste.
  • 4 remove from heat and add in the two boxes of chicken stuffing mix, and toss with a wooden spoon until the bread crumbs have absorbed the broth.
  • 5 cover with a lid and let stand for 10 minutes.
  • 6 if you find it too dry just add in more broth.
  • 7 fluff with a spoon or fork.
  • 8 season with salt if needed and serve.
  • 9 delicious!

Easy Steak Pot Pie

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1 1/4 lbs boneless beef top sirloin steaks, cut into 1/2 inch cubes
  • 2 tablespoons butter
  • 1/4 teaspoon pepper
  • 1 minced garlic clove
  • 1 (16 ounce) package frozen stew vegetables (i have used fresh cut carrots, potatoes, celery & onion partially cooked)
  • 2 tablespoons water (have used red wine)
  • 1/2 teaspoon dried thyme
  • 1 (12 ounce) jar mushroom gravy
  • 1 (8 ounce) package crescent rolls

Recipe

  • 1 in a large ovenproof skillet, brown beef in butter.
  • 2 remove beef; season with pepper and keep warm.
  • 3 in the same skillet, combine the vegetables, garlic, water and thyme. stir in the gravy. bring to a boil.
  • 4 reduce heat; simmer, uncovered, until the vegetables are thawed.
  • 5 stir in beef; remove from the heat.
  • 6 separate crescent dough into eight triangles. starting at the wide end roll up a third of the length and place over beef mixture with the pointed ends toward the center.
  • 7 bake, uncovered at 375 degrees for 16-18 minutes or until golden brown.

Great Turkey Meatloaf

Ingredients

  • 2 lbs ground turkey
  • 3/4 cup oatmeal
  • 1 tablespoon parmesan cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1 (1 1/4 ounce) package onion soup mix
  • 1 egg
  • 1 (10 1/2 ounce) can cream of mushroom soup

Recipe

  • 1 mix turkey, oatmeal, parmesan cheese, garlic powder, pepper, onion soup mix, and egg together.
  • 2 mix in 1/2 can of mushroom soup.
  • 3 press into loaf pan.
  • 4 pour remaining 1/2 can of mushroom soup over top.
  • 5 bake 1 hour at 350.

Ground Beef Supreme Yumminess

Ingredients

  • Servings: 4
  • 1 cup cheddar cheese
  • 1/3 cup mayonnaise
  • 6 slices bacon, cooked and crumbled
  • 1 tablespoon olive oil
  • 8 mushrooms
  • 1/3 cup onion
  • 2 minced garlic cloves
  • 1/2 teaspoon adobo seasoning
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/4 teaspoon red pepper flakes
  • 1/8 teaspoon tabasco sauce
  • 1 lb lean ground beef

Recipe

  • 1 shred cheese.
  • 2 mix cheese, mayo, and crumbled bacon in bowl and set aside.
  • 3 slice mushrooms.
  • 4 in a large frying pan heat up olive oil and add garlic and mushrooms. saute until mushrooms are cooked (5-10 minutes).
  • 5 add cooked mushrooms and garlic to mayo, cheese, bacon mixture and stir in lightly. set this aside again.
  • 6 put ground beef, onions, adobo, salt and pepper in frying pan and cook, crumbling beef, until meat is completely cooked. turn off the heat and add mayo mixture, stirring until thoroughly mixed in with the ground beef mixture.
  • 7 serve immediately!

Fava (lima) Beans With Mushrooms

Ingredients

  • Servings: 4
  • 2 cups prepared fava beans (membrane removed)
  • 3/4 cup fresh mushrooms, chopped
  • 1/2 teaspoon chili flakes (optional)
  • salt & pepper
  • 1 tablespoon butter (margerine)
  • 1 tablespoon olive oil
  • 6 tablespoons dry wine or 6 tablespoons apple juice

Recipe

  • 1 melt the butter & olive oil in a skillet large enough to hold the beans & mushrooms in a single or at most, double layer.
  • 2 add prepared beans, mushrooms, chili & wine (juice).
  • 3 season with salt & pepper.

  • 1 heat olive oil in large skillet.
  • 2 when oil is hot, add chicken breasts.

  • 1 whisk the eggs with the water and salt and pepper. water helps bond the egg, so the omelet will fold more easily.
  • 2 put 3/4 (15g) of the butter and 1/2 (ie. a dash) of the olive oil in a good non-stick 20cm to 30cm frying pan. heat till the butter bubbles. mixing the oil with butter makes the mixture spread out, and mushrooms taste better cooked in butter.
  • 3 put the mushroom, onion and bacon (and potato, if using) in the frying pan. cook until the onion starts to brown (and stir to ensure the mushroom soaks & bacon cooks). remove from the pan.
  • 4 put 1/4 (5g) of the butter and another dash of the olive oil in the pan. again heat until it bubbles. make sure it covers the base of the frying pan (by tipping & tilting the frying pan). put the whisked egg in the frying pan, and make sure that it covers the base of the frying pan (by tipping & tilting again).
  • 5 immediately put the cooked bacon, mushrooms & onions on one half of the omelet - whichever half looks like it might cook the slowest. lay the cheese on top of the bacon, mushrooms & onions.

  • 1 slice sirloin or tenderloin steak into thin strips. add 2 tbs. oil to large skillet. add steak and chopped onion to skillet. sautee until steak is no longer pink. add can of beef consomme. ( you may add about 1/2 cup water, if you like to make more sauce). simmer about 20 minutes or until beef is tender. add mushrooms. simmer until mushrooms are cooked through. meanwhile mix sour cream, flour, nutmeg,garlic powder, salt & pepper in bowl.
  • 2 reduce heat on meat mixture. add sour cream mixture to meat. stir until all is mixed thouroughly. cook on low for about 10 more minutes.
  • 3 serve over wide egg noodles.

  • 1 defrost the chicken for several hours at room temperature.

  • 1/2 cup coarse salt
  • 1 cup brown sugar

  • 1 teaspoon ground allspice
  • 1 teaspoon cinnamon
  • 1 teaspoon clove
  • 1/4 teaspoon pepper
  • 1/2 cup butter or 1/2 cup oleo

Recipe

  • 1 chop tomatoes, onions, hot peppers, celery. put in large kettle add salt. cover bring to boil and simmer for 1 hour. stir often. put mixture through food mill. put back in kettle. in med bowl add remaining ingredients except butter. add the seasonings to the hot puree, beating in with a whisk. add the butter and whisk smooth. bring to a boil then simmer over med heat for 3 minutes. pour into hot pints. process 15 minutes in hot water bath.
  • 2 to serve, add 1 can mushroom soup and 1 can water to the pint of soup or you can add 1 1/2 cup milk or water. i use as canned.

Ginger-soy Chicken Noodle Soup

  • 1 shallot, thinly sliced
  • 4 scallions, thinly sliced ( and green parts separated)

  • 1 quart chicken stock
  • 2 teaspoons soy sauce
  • 1/3 lb raw chicken breast, cut into strips (about 1 small)

  • 1 heat oil in a dutch oven over medium-low heat until shimmering. add shallot, parts of scallions and ginger, and saute until soft, about 4 minutes. add garlic and mushrooms and saute until mushrooms begin to give up liquid, about 4 minutes.
  • 2 add stock and soy sauce and bring to a boil. add chicken and noodles and simmer until chicken is cooked through and noodles are tender, 9-11 minutes. add half the reserved green parts of the scallions and taste for seasoning, adding more soy if salt is needed. serve garnished with remaining green parts of scallions. serve with sriracha if desired.

Devilled Round Steak With Mushrooms

  • 1 score steak deeply with knife on both sides; rub in mustard. melt 3 tablespoons butter. wisk melted butter with worcestershir, salt, pepper, paprika, onion and lemon in small bowl. pour over steak; marinate 8 hours or overnight.
  • 2 remove from marinade; reserve liquid. brown steak on both sides in medium frying pan over high heat, about one minute a side.

  • 3 (14 ounce) cans chicken broth
  • 1 1/3 cups quick-cooking grits
  • 1/2 cup parmesan cheese, grated
  • 1/2 teaspoon salt
  • 2 tablespoons butter, melted
  • 2 cups mayonnaise
  • 1 cup parmesan cheese, grated
  • 2 (4 ounce) cans mushroom stems and pieces, drained
  • 2 (2 7/8 ounce) cans french fried onion rings

  • 1 grits toast.
  • 2 bring broth to boil in large pot.
  • 3 stir in grits and return to boil.
  • 4 cover, reduce heat, simmer for 5 minutes (until grits thicken) stir occasionally.

  • add 1/2 tsp of worcestershire sauce, sprinkle of paprika and a groud black pepper and taste, add more seasoning if needed.

  • 1 1/4 cups chicken stock
  • 1/2 cup heavy cream
  • 2 tablespoons grainy mustard
  • 2 tablespoons chopped fresh tarragon (i think i used about 1 t of dried tarragon)
  • 1 lb egg noodles, cooked, drained, and buttered for serving

French Mushroom Tart

Ingredients

  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 2 onions, thinly sliced
  • 1 garlic clove, minced
  • salt and pepper
  • fresh savory, leaves
  • 10 ounces puff pastry
  • 5 ounces mushrooms, thinly sliced

Recipe

  • 1 in skillet, heat 1 tablespoon butter and olive oil over medium heat. stir in onions and cook until soft and light golden. add salt, pepper and savory to taste. allow to cool.
  • 2 cut puff pastry dough into 4 equal pieces and roll each out to a circle about 1/8 inch thick and 4 inches in diameter. place circles on a baking sheet and prick dough lightly with a fork.
  • 3 spread cooled onion mixture over dough.
  • 4 arrange mushrooms on top of dough, slightly overlapping. melt remaining butter and brush over mushrooms.
