Gan Eden Salad

Total Time: 20 mins Preparation Time: 15 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 cup bulgur wheat or 1 cup bulgur
  • 1 onion, chopped
  • 1 cup fresh mushrooms, chopped
  • 1/2 cup pecans, chopped
  • 1/2 cup raisins
  • 1/2 cup dried fig, chopped
  • 1 teaspoon lemon zest
  • 1/2 lemon, juice of
  • 1 tablespoon olive oil
  • 1 teaspoon thyme leaves
  • 1/2 teaspoon cinnamon
  • salt and pepper

Recipe

  • 1 cook bulgur or wheat kernels until soft-usually 2 cups of water to 1 cup of grain is sufficient.
  • 2 saute onions until translucent, add mushrooms and saute 2 minutes more.
  • 3 add thyme and cinnamon.
  • 4 mix onion and mushroom mixture together with bulgur or wheat.
  • 5 add pecans, raisins, figs and lemon zest.
  • 6 season with lemon juice, salt and pepper.
