Gan Eden Salad

Ingredients
- Servings: 4
- 1 cup bulgur wheat or 1 cup bulgur
- 1 onion, chopped
- 1 cup fresh mushrooms, chopped
- 1/2 cup pecans, chopped
- 1/2 cup raisins
- 1/2 cup dried fig, chopped
- 1 teaspoon lemon zest
- 1/2 lemon, juice of
- 1 tablespoon olive oil
- 1 teaspoon thyme leaves
- 1/2 teaspoon cinnamon
- salt and pepper
Recipe
- 1 cook bulgur or wheat kernels until soft-usually 2 cups of water to 1 cup of grain is sufficient.
- 2 saute onions until translucent, add mushrooms and saute 2 minutes more.
- 3 add thyme and cinnamon.
- 4 mix onion and mushroom mixture together with bulgur or wheat.
- 5 add pecans, raisins, figs and lemon zest.
- 6 season with lemon juice, salt and pepper.
