Heirloom Tomato, Spinach And Portabello Pasta

Ingredients

  • Servings: 4
  • 1 1/2 cups cherry heirloom tomatoes
  • 2 tablespoons olive oil
  • 1/4 cup wine
  • 1 garlic clove, minced
  • 1 bunch spinach
  • 1 grilled portabello mushroom cap
  • salt and pepper, to taste
  • 8 ounces cooked linguine or 8 ounces spaghetti
  • 1 tablespoon fresh grated parmesan cheese

Recipe

  • 1 in a covered skillet or saucepan, cook tomatoes in olive oil unbtil they begin to burst. add wine and garlic and cook 3 minutes. add spinach and cook until wilted. add mushrooms and cook until heated through. season with salt and pepper and pour over pasta. sprinkle with parmesan and serve.
