Ingredients

- 1 1/2 cups cherry heirloom tomatoes
- 2 tablespoons olive oil
- 1/4 cup wine
- 1 garlic clove, minced
- 1 bunch spinach
- 1 grilled portabello mushroom cap
- salt and pepper, to taste
- 8 ounces cooked linguine or 8 ounces spaghetti
- 1 tablespoon fresh grated parmesan cheese
Recipe
- 1 in a covered skillet or saucepan, cook tomatoes in olive oil unbtil they begin to burst. add wine and garlic and cook 3 minutes. add spinach and cook until wilted. add mushrooms and cook until heated through. season with salt and pepper and pour over pasta. sprinkle with parmesan and serve.
