Greek Stuffed Mushrooms

Total Time: 9 mins Preparation Time: 5 mins Cook Time: 4 mins

Ingredients

  • 24 fresh mushrooms, stems removed
  • 1 (10 ounce) package frozen spinach, defrosted
  • 1/2 cup parmesan cheese, grated
  • 4 ounces feta cheese, crumbled
  • 1/2 cup green onion, finely chopped
  • 1/2 cup fresh parsley, finely chopped
  • salt, to taste

Recipe

  • 1 drain spinach in colander and press out all liquid.
  • 2 in a mixing bowl, combine spinach, cheeses, onion, parsley and salt. mix well.
  • 3 mound mushroom caps high with spinach mixture.
  • 4 arrange on serving plate and microwave on high until steaming, approximately 3-4 minutes.
