Ground Beef Goulash

Ingredients

  • Servings: 6
  • 1/2 lb uncooked bacon, chopped into small pieces (can use more)
  • 1 lb ground beef or 1 lb italian sausage, with casings removed
  • 1 medium onion, chopped
  • 1 small green bell pepper, seeded and chopped
  • 2 tablespoons fresh minced garlic
  • 1 -2 teaspoon dried chili pepper flakes (optional or to taste)
  • 1 teaspoon seasoning salt (or to taste) or 1 teaspoon salt (or to taste)
  • 1 teaspoon fresh ground black pepper (or to taste)
  • 2 (10 ounce) cans tomato soup, undiluted
  • 1 (398 ml) can tomato sauce
  • 1 -2 tablespoon brown sugar
  • 1 cup water (more if needed)
  • 1 (10 ounce) can mushrooms, drained (can use sauteed fresh if desired)
  • 1/2-3/4 lb uncooked penne pasta (i use about 3/4 of a 500-gram package penne)
  • 2 cups shredded cheddar cheese (or to taste) or 2 cups mozzarella cheese (or to taste)

Recipe

  • 1 in a large skillet, cook the bacon pieces until crisp; remove and drain fat (i save the fat to use in recipes).
  • 2 add in the ground beef, onion and bell pepper; cook over medium-high heat until no longer pink; drain the grease.
  • 3 to the skillet with the ground beef add in the garlic, chili flakes, seasoned salt, black pepper and return the bacon to the skillet; cook stirring with a wooden spoon until the beef is slightly browned (about 8 minutes).
  • 4 add in the two cans of undiluted tomato soup, tomato sauce, 1 tablespoon brown sugar, water and sliced mushrooms; stir and simmer uncovered over low heat for about 50 minutes (the longer you simmer the thicker and richer it will be, you can simmer up to 1-1/2 hours if desired).
  • 5 if the mixture is too thick then add in more water and simmer for more time.
  • 6 at this point you may season with more salt and pepper to taste if desired.
  • 7 meanwhile cook the pasta in boiling water until al dente; drain.
  • 8 when the sauce has finished cooking mix in the cooked pasta, then sprinkle the top with grated cheese and place under the broiler to melt, or if your mixture is very hot the cheese will melt by itself.
  • 9 spoon out of the skillet onto plates.
