Gluten-free Avocado And Tomato Salad

Ingredients

  • Servings: 8
  • 4 tomatoes, parboiled, skinned, and diced
  • 4 avocados, peeled and mashed
  • 1 red onion, peeled and diced
  • 1 small onion, peeled and diced
  • 10 fresh mushrooms, diced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon fresh minced garlic
  • 1 teaspoon sea salt
  • 1/4 teaspoon black pepper

Recipe

  • 1 combine tomatoes, avocados, onions and mushrooms until just blended.
  • 2 sprinkle with lemon juice.
  • 3 season with garlic, salt and pepper.
  • 4 serve and enjoy.
