Grilled Veggies With Honey Chipotle Shrimp

Ingredients
- Servings: 6
- 1 1/2 lbs large shrimp, peeled and deveined
- 1/4 cup honey
- 1 tablespoon mustard
- 1 tablespoon minced canned chipotle chile in adobo
- 2 garlic cloves, minced
- 1/2 teaspoon kosher salt
- 2 tablespoons minced fresh cilantro
- 2 tablespoons olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 green pepper
- 1 red pepper
- 1 large onion
- 20 garlic cloves
- 1/2 pint grape tomatoes
- 2 zucchini
- 6 ounces mushrooms
Recipe
- 1 mix up shrimp marinade and marinade shrimp for 1 hour in fridge.
- 2 mix cut veggies with olive oil and salt and pepper and let sit for one hour.
- 3 preheat grill.
- 4 grill veggies for 25 minutes, turning occasionally, or until done.
- 5 grill shrimp about 3 minutes per side or until pink and curled.
- 6 if you want to use the oven to cook the veggies, roast at 450 for 30 minutes, turning every ten minutes or so, or until done.
