Ingredients

• 3 -4 lbs hen or 2 rabbits or 2 squirrels, cut up
• 1/2 cup flour
• 1/2 cup oil
• 4 onions, chopped
• 1 cup green pepper, chopped
• 3 garlic cloves, minced
• 3 stalks celery, chopped
• 8 ounces tomato sauce
• 1 (6 ounce) can sliced mushrooms
• 2 bay leaves
• 1 cup dry vermouth
• salt and pepper

Recipe

• 1 make a roux with oil and flour.
• 2 add onions, garlic, green pepper and celery.
• 3 cook until tender.
• 4 add all other ingredients and cook until game is tender.
• 5 serve over rice.
