Duxelle With Ham

Total Time: 10 mins Preparation Time: 5 mins Cook Time: 5 mins

Ingredients

  • 1 ounce butter
  • 3 ounces chopped fresh mushrooms
  • 1 chopped shallot
  • 1/4 chopped onion
  • 1 slice ham, chopped
  • 2 tablespoons dry wine
  • 1 pinch thyme

Recipe

  • 1 in a skillet, heat ham with butter over a moderate fire.
  • 2 saute for a few minutes, then add onion, shallots, and saute one more minute.
  • 3 add mushrooms and thyme and let cook until most of the moisture is gone.
  • 4 then add wine and mix together.
  • 5 season to taste.
