- 1/4 cup red bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup mushroom, sliced
- 1 cup spinach, fresh
- 3 eggs
- creole seasoning
Recipe
- 1 heat olive oil in large skillet.
- 2 add peppers, red onion and mushrooms.
- 3 sautee until crisp tender.
- 4 add spinach leaves and let them wilt down slightly.
- 5 beat eggs and add them to the skillet.
- 6 season with creole seasoning.
- 7 cook until the eggs are cooked.
