Healthy Breakfast Scramble

Ingredients

  • Servings: 1
  • 1 tablespoon olive oil
  • 1/4 cup red bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup mushroom, sliced
  • 1 cup spinach, fresh
  • 3 eggs
  • creole seasoning

Recipe

  • 1 heat olive oil in large skillet.
  • 2 add peppers, red onion and mushrooms.
  • 3 sautee until crisp tender.
  • 4 add spinach leaves and let them wilt down slightly.
  • 5 beat eggs and add them to the skillet.
  • 6 season with creole seasoning.
  • 7 cook until the eggs are cooked.
