Fresh Tomato Gravy

Ingredients
- 1 tablespoon butter
- 1 cup chopped mushroom
- 1/2 cup finely chopped onion
- 2 cups chopped peeled tomatoes
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Recipe
- 1 melt butter in a medium nonstick saucepan over medium heat.
- 2 add mushrooms and onion, and cook 4 minutes or until tender, stirring frequently.
- 3 add chopped red tomato.
- 4 bring to a boil, and cook for 10 minutes or until liquid almost evaporates.
- 5 stir in 1/4 teaspoon salt and 1/4 teaspoon pepper.
