Fettuccine With Spinach Cream Sauce

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 8 ounces uncooked fettuccine pasta
  • 3 tablespoons butter or 3 tablespoons margarine
  • 1 cup fresh mushrooms, sliced 1/4 inch
  • 1 tablespoon all-purpose flour
  • 1/4 cup grated parmesan cheese
  • 1 1/2 cups half-and-half
  • 1 (10 ounce) package frozen chopped spinach, thawed, drained
  • 15 cherry tomatoes, halved
  • 1 teaspoon basil leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 cook fettucine according to package directions; drain, rinse and drain again.
  • 2 meanwhile, in 10" skillet melt butter; add mushrooms.
  • 3 cook over medium heat, stirring occasionally, until mushrooms are tender (2 to 3 minutes).
  • 4 stir in flour until smooth and bubbly (1 minute).
  • 5 stir in remaining ingredients, except fettucine.
  • 6 continue cooking, stirring occasionally, until heated through (6 to 8 minutes).
  • 7 serve over fettucine.
