Fresh Mushroom & Parsley Soup

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 lb mushroom, sliced
  • 1/2 cup butter
  • 1/4 cup wine
  • 1 1/2 cups fresh parsley, finely chopped
  • 2 (15 ounce) cans beef broth
  • 2 cups half-and-half cream
  • 2 cups sour cream
  • salt and pepper

Recipe

  • 1 saute mushrooms in butter and wine.
  • 2 add parsley and saute 5 more minutes.
  • 3 add broth and half & half.
  • 4 simmer 5-10 minutes.
  • 5 remove from heat.
  • 6 stir in sour cream,salt and pepper.
  • 7 can be reheated but do not boil.
