Fresh Mushroom Bisque

Ingredients

- 1 lb butter
- 1 1/2 lbs fresh mushrooms, sliced
- 2 garlic cloves, minced
- 1 cup green onion, chopped
- 4 tablespoons lemon juice
- 1/4 cup flour
- 8 cups chicken broth
- 2 teaspoons salt
- 1/2 teaspoon pepper
- 4 cups half-and-half
Recipe
- 1 melt butter in large stock pot and saute garlic, onion, and mushrooms for about 3 to 5 minutes until mushrooms are golden.
- 2 add lemon juice.
- 3 mix flour with a small amount of chicken broth to prevent lumps and add along with remaining ingredients to mushroom mixture. simmer on low heat for 20-25 minutes.
