Fresh Mushroom Bisque

Ingredients

- 2 teaspoons butter
- 1 medium onion, chopped
- 1/2 lb mushroom, chopped
- 1 cup chicken broth
- 1 1/2 cups skim milk
- 1/4 teaspoon thyme
- 1/4 teaspoon salt
- 1/8 teaspoon pepper
Recipe
- 1 in a large nonstick skillet, melt butter over medium heat.
- 2 add onion and cook until softened, but not browned, about 3 minutes.
- 3 add mushrooms and cook, stirring, 3 minutes longer.
- 4 scrap onion and mushrooms into a food processor or blender.
- 5 add chicken broth and ½ cup milk and puree until smooth.
- 6 return to saucepan. add remaining milk, thyme, salt, pepper and nutmeg.
- 7 simmer 5 minutes. serve hot.
