Fresh Mushroom Bisque

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 teaspoons butter
  • 1 medium onion, chopped
  • 1/2 lb mushroom, chopped
  • 1 cup chicken broth
  • 1 1/2 cups skim milk
  • 1/4 teaspoon thyme
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper

Recipe

  • 1 in a large nonstick skillet, melt butter over medium heat.
  • 2 add onion and cook until softened, but not browned, about 3 minutes.
  • 3 add mushrooms and cook, stirring, 3 minutes longer.
  • 4 scrap onion and mushrooms into a food processor or blender.
  • 5 add chicken broth and ½ cup milk and puree until smooth.
  • 6 return to saucepan. add remaining milk, thyme, salt, pepper and nutmeg.
  • 7 simmer 5 minutes. serve hot.
