Healthy Egg And Chips

Total Time: 28 mins Preparation Time: 3 mins Cook Time: 25 mins

Ingredients

  • Servings: 4
  • 500 g potatoes, diced
  • 2 shallots, sliced
  • 1 tablespoon olive oil
  • 2 teaspoons dried oregano
  • 200 g small mushrooms
  • 4 eggs

Recipe

  • 1 heat oven to 200c/fan 180c/gas 6.
  • 2 tip the potatoes and shallots into a large, non-stick roasting tin.
  • 3 drizzle with the olive oil, sprinkle over with the oregano.
  • 4 mix everything together well.
  • 5 bake for 15 minutes.
  • 6 add the mushrooms.
  • 7 cook for a further 10 minutes until the potatoes are browned and tender.
  • 8 make four gaps in the vegetables. crack an egg into each space.
  • 9 return to the oven for 3 to 4 minutes or until the eggs are cooked to your liking.
