Fritty Frittata

Ingredients

- 8 large eggs, beaten
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 1 tablespoon garlic, minced
- 3/4 cup vegetables, chopped (such as roasted red pepper, broccoli, mushrooms, or whatever you have on hand)
- 2 serrano chilies, de-seeded and chopped
- 1/4 cup grated parmesan cheese or 1/4 cup asiago cheese or 1/4 cup romano cheese
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon oregano
- 1 tablespoon tabasco sauce
- 1 teaspoon worcestershire sauce
Recipe
- 1 pre-heat oven to 350.
- 2 heat oil in skillet.
- 3 add onion and garlic, saute until soft.
- 4 add vegetables and chilies, saute 5 minutes.
- 5 put eggs in a bowl and whisk until beaten.
- 6 add cooked vegetables and remaining ingredients to eggs in bowl.
- 7 stir to combine.
- 8 oil a 9" pie pan.
- 9 pour egg mixture into pie pan.
- 10 bake on 350 for 30 minutes.
