Fritty Frittata

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 8 large eggs, beaten
  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 1 tablespoon garlic, minced
  • 3/4 cup vegetables, chopped (such as roasted red pepper, broccoli, mushrooms, or whatever you have on hand)
  • 2 serrano chilies, de-seeded and chopped
  • 1/4 cup grated parmesan cheese or 1/4 cup asiago cheese or 1/4 cup romano cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon oregano
  • 1 tablespoon tabasco sauce
  • 1 teaspoon worcestershire sauce

Recipe

  • 1 pre-heat oven to 350.
  • 2 heat oil in skillet.
  • 3 add onion and garlic, saute until soft.
  • 4 add vegetables and chilies, saute 5 minutes.
  • 5 put eggs in a bowl and whisk until beaten.
  • 6 add cooked vegetables and remaining ingredients to eggs in bowl.
  • 7 stir to combine.
  • 8 oil a 9" pie pan.
  • 9 pour egg mixture into pie pan.
  • 10 bake on 350 for 30 minutes.
