Fried Rice With Shrimp (1953)

Ingredients

- 2 tablespoons peanut oil
- 1 large onion, finely chopped
- 1 cup finely diced celery
- 1/2 cup chopped mushroom
- 16 ounces cooked shrimp
- 4 cups cooked rice
- 3 tablespoons soy sauce
- 1 tablespoon salt (or to taste)
- 4 eggs, well-beaten
Recipe
- 1 heat oil in a skillet over low heat.
- 2 add onion and cook until tender but not brown, about 3 minutes.
- 3 add celery, mushrooms and shrimp, and cook about 5 minutes.
- 4 stir in rice, soy sauce and salt, and cook about 2 minutes.
- 5 add eggs and stir well.
- 6 cook, stirring, until eggs are cooked, 2-3 minutes.
