Egg, Bacon, Mushroom, And Cheese Casserole

Ingredients

- 1 tablespoon butter, plus extra for the dish
- 4 slices bacon
- 8 green onions, thinly sliced ( and green parts)
- 1 lb mushroom, sliced
- 8 large eggs
- 1 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 2 1/2 cups shredded cheddar cheese
Recipe
- 1 preheat the oven to 350°; butter a shallow 2-quart casserole.
- 2 in a large skillet, cook the bacon until crisp; drain well and crumble.
- 3 add the green onions and 1 tablespoon butter to the pan and cook for 2 minutes, stirring.
- 4 add the mushrooms and cook for 2 to 3 minutes more, then remove from the heat.
- 5 in a medium bowl, beat the eggs, milk, salt, and pepper together.
- 6 stir in the cheese and mushroom mixture.
- 7 pour into the prepared dish and bake, uncovered, for 30-35 minutes, or until puffed and set.
