Chinese Turkey With Naw Mai Fun Stuffing

Total Time: 4 hrs Preparation Time: 1 hr Cook Time: 3 hrs

Ingredients

  • Servings: 8
  • 1 (12 lb) whole turkey
  • 1 tablespoon salt
  • 1 teaspoon crushed roasted sichuan peppercorn
  • 4 cups glutinous rice (naw mai)
  • water
  • 2 links lamb sausage, chinese, slice half moon
  • 3 links duck liver sausage, chinese slice half moon
  • 1 1/2 lbs chinese barbecue lamb, small cubes
  • 1/8 cup dried shrimp, presoak
  • 6 black dried chinese mushrooms, presoak and 1/4 inch cube
  • 1/4 cup radish, salted, chinese, small cubes
  • 1 cup water chestnut, 1/4 inch cube
  • 1/4 cup bamboo shoot, soak and cut into 1/4 inch cube
  • 1/2 cup frozen green pea
  • oil
  • garlic powder
  • onion powder
  • salt
  • pepper
  • oyster sauce
  • pine nuts

Recipe

  • 1 rub the turkey with oil and season with salt and peppercorns and set aside.
  • 2 place the rice in a bowl. cover with the water and let soak for 1 hour. combine the rice and water and wash 3 times drain each time.
  • 3 place the rice into a rice cooker and cook until done and set for another 30 minutes.
  • 4 in a wok add in 3 tbsp oil and all of the meats mixture, garlic and onion mix, salt and pepper and stir-fried ingredients after 3 to 4 minutes. take a spoonful and taste for seasoning and salt and pepper to taste and add in the rice and combine through. add oyster sauce to taste and top with pine nuts. pour the rice into a large bowl and set aside to cool for an hour. take some of the rice and stuff into the turkey and place onto a roasted rack and into a large baking pan.
  • 5 preheat the oven to 325º. bake about 2 1/2 to 3 hours.
