Easy Chicken Mushroom Stew

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 2
  • 1 medium onion, coarsely chopped
  • 1 (9 ounce) package sliced mushrooms
  • 1 teaspoon oil
  • 1 (14 1/2 ounce) can chicken broth
  • 3 tablespoons wine
  • thyme
  • paprika
  • bay leaf
  • black pepper
  • 1 large boneless skinless chicken breast
  • 2 tablespoons butter or 2 tablespoons margarine
  • 2 tablespoons flour
  • 1 large potato, coarsely diced
  • 1/2 cup frozen mixed vegetables, thawed

Recipe

  • 1 mix onion and mushrooms with oil in covered medium saucepan. saute on low for 5-10 minutes until mushrooms give up their liquid.
  • 2 add chicken broth, wine, sprinkle of thyme, sprinkle of paprika, sprinkle of black pepper and the bay leaf. simmer for 20 minutes.
  • 3 coarsely chop the chicken and add to the broth. simmer 5-7 minutes until the pink is gone.
  • 4 while the broth is simmering, in a separate pan, boil the potato for 4 minutes, add vegetables and boil for 3 more minutes.
  • 5 drain potatoes/vegetables, and rinse with cold water immediately.
  • 6 melt the butter and mix in the flour. stir by spoonfuls into the broth, until thickened.
  • 7 add potatoes/vegetables to stew and serve immediately.
