Crockpot Guinness Beef Stew

Total Time: 3 hrs 25 mins Preparation Time: 25 mins Cook Time: 3 hrs

Ingredients

  • Servings: 2
  • 1 1/2 lbs stewing beef
  • sea salt
  • ground pepper
  • 1 tablespoon olive oil
  • 1 cup vegetable broth
  • 1 (14 ounce) can beef broth
  • 1 cup guinness draught
  • 8 ounces baby portabella mushrooms
  • 1/2 vidalia onion
  • 2 bay leaves
  • 1 teaspoon dried thyme

Recipe

  • 1 heat olive oil in pan. cut beef into 1" cubes, add to hot oil. season beef cubes with sea salt and freshly ground pepper to taste.
  • 2 while beef is browning, coarsely chop vidalia onion and put in crockpot. add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths.
  • 3 once beef is fully cooked, dump it into the crockpot, juices and all.
  • 4 add beer, cover, and cook on high for 3-4 hours.
  • 5 remove bay leaves before serving.
