Crockpot Guinness Beef Stew

Ingredients

- 1 1/2 lbs stewing beef
- sea salt
- ground pepper
- 1 tablespoon olive oil
- 1 cup vegetable broth
- 1 (14 ounce) can beef broth
- 1 cup guinness draught
- 8 ounces baby portabella mushrooms
- 1/2 vidalia onion
- 2 bay leaves
- 1 teaspoon dried thyme
Recipe
- 1 heat olive oil in pan. cut beef into 1" cubes, add to hot oil. season beef cubes with sea salt and freshly ground pepper to taste.
- 2 while beef is browning, coarsely chop vidalia onion and put in crockpot. add cleaned mushrooms, bay leaves, thyme, vegetable and beef broths.
- 3 once beef is fully cooked, dump it into the crockpot, juices and all.
- 4 add beer, cover, and cook on high for 3-4 hours.
- 5 remove bay leaves before serving.
