Fried Rice With Sausage And Lima Beans

Ingredients
- Servings: 4
- 2 cups cooked rice
- 1 tablespoon butter
- 1 teaspoon canola oil
- 8 ounces fresh mushrooms
- 1 onion, chopped
- 1 cup lima beans, cooked
- 1/4 lb sausage (1 used 1 johnsonville lamb sausage brat, hot flavor, casing removed)
- 2 eggs, lightly beaten
- 2 tablespoons soy sauce
- 1 teaspoon ponzu sauce
- 1 teaspoon poultry seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 remove casing from sausage link. crumble and saute in an iron skillet until no longer pink. remove from skillet and set aside.
- 2 saute onion in same skillet for 5 minutes. add mushrooms, butter and oil, if needed. saute an additional 10 minutes, until mushrooms are softened. add salt and pepper to onion mixture.
- 3 to onion mixture, add cooked rice and poultry seasoning. saute approx 5 minutes. add soy and ponzu sauces. stir.
- 4 to rice mixture, add cooked sausage and lima beans. saute 1 minute.
- 5 creat a well in the center of the skillet. add beaten eggs. cook until eggs are scrambled, approx 2-3 minutes. incorporate eggs into the rice mixture.
- 6 serves 4.
