Fried Rice With Sausage And Lima Beans

Ingredients

  • Servings: 4
  • 2 cups cooked rice
  • 1 tablespoon butter
  • 1 teaspoon canola oil
  • 8 ounces fresh mushrooms
  • 1 onion, chopped
  • 1 cup lima beans, cooked
  • 1/4 lb sausage (1 used 1 johnsonville lamb sausage brat, hot flavor, casing removed)
  • 2 eggs, lightly beaten
  • 2 tablespoons soy sauce
  • 1 teaspoon ponzu sauce
  • 1 teaspoon poultry seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 remove casing from sausage link. crumble and saute in an iron skillet until no longer pink. remove from skillet and set aside.
  • 2 saute onion in same skillet for 5 minutes. add mushrooms, butter and oil, if needed. saute an additional 10 minutes, until mushrooms are softened. add salt and pepper to onion mixture.
  • 3 to onion mixture, add cooked rice and poultry seasoning. saute approx 5 minutes. add soy and ponzu sauces. stir.
  • 4 to rice mixture, add cooked sausage and lima beans. saute 1 minute.
  • 5 creat a well in the center of the skillet. add beaten eggs. cook until eggs are scrambled, approx 2-3 minutes. incorporate eggs into the rice mixture.
  • 6 serves 4.
