Crustless Crab, Bacon & Mushroom Quiche

Total Time: 1 hr 10 mins Preparation Time: 30 mins Cook Time: 40 mins

Ingredients

  • Servings: 8
  • 12 ounces crab
  • 12 slices bacon
  • 8 ounces mushrooms
  • 4 green onions, stalks
  • 4 eggs
  • 1 tablespoon garlic
  • 8 ounces shredded swiss cheese
  • 8 ounces evaporated skim milk, one can
  • 1 teaspoon tabasco sauce
  • 2 teaspoons dry ground mustard
  • 1 teaspoon paprika
  • 1 tablespoon old bay seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Recipe

  • 1 clean mushrooms with a moist towel and rinse & dry green onions.
  • 2 cook bacon in a frying pan or buy precooked.
  • 3 drain bacon on a papertowel covered plate, if you fry.
  • 4 chop mushrooms, green onions, garlic, and bacon.
  • 5 in the same frying pan, pour 1-2 tbsps of olive oil and saute mushrooms, add garlic when mushrooms are almost done.
  • 6 cook for 3 more minutes, stirring for even cooking.
  • 7 drain mushroom mixture on a papertowel covered plate.
  • 8 in a large mixing bowl, add eggs, evaporated skim milk, tabasco, and all seasoning. add the bacon, mushroom mixture, green onions, and cheese last. mix until blended and pour into a greased 11 x 7 or 8 x 8 glass dish or pie plate. bake @ 350 for 40 minutes.
