Crustless Crab, Bacon & Mushroom Quiche

Ingredients

- 12 ounces crab
- 12 slices bacon
- 8 ounces mushrooms
- 4 green onions, stalks
- 4 eggs
- 1 tablespoon garlic
- 8 ounces shredded swiss cheese
- 8 ounces evaporated skim milk, one can
- 1 teaspoon tabasco sauce
- 2 teaspoons dry ground mustard
- 1 teaspoon paprika
- 1 tablespoon old bay seasoning
- 1 teaspoon salt
- 1/2 teaspoon pepper
Recipe
- 1 clean mushrooms with a moist towel and rinse & dry green onions.
- 2 cook bacon in a frying pan or buy precooked.
- 3 drain bacon on a papertowel covered plate, if you fry.
- 4 chop mushrooms, green onions, garlic, and bacon.
- 5 in the same frying pan, pour 1-2 tbsps of olive oil and saute mushrooms, add garlic when mushrooms are almost done.
- 6 cook for 3 more minutes, stirring for even cooking.
- 7 drain mushroom mixture on a papertowel covered plate.
- 8 in a large mixing bowl, add eggs, evaporated skim milk, tabasco, and all seasoning. add the bacon, mushroom mixture, green onions, and cheese last. mix until blended and pour into a greased 11 x 7 or 8 x 8 glass dish or pie plate. bake @ 350 for 40 minutes.
