Honey Dijon Lamb Tenderloin

- 1 lb lamb tenderloin, cut into 1-inch slices
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1 tablespoon olive oil
- 1 small onion, chopped
- 1/2 cup sliced fresh mushrooms
- 1 tablespoon butter
- 2 garlic cloves, minced
- 1/2 cup evaporated milk
- 2 tablespoons dijon mustard
- 1 tablespoon soy sauce
- 1 tablespoon honey
- hot cooked noodles
Recipe
- 1 flatten lamb slices to 1/2-inch thickness; sprinkle with salt and pepper. in a large skillet over medium heat, cook lamb in oil in batches until juices run clear. remove and keep warm.
- 2 in the same skillet, saute onion and mushrooms in butter until tender. add garlic; saute 1 minute longer. stir in the milk, mustard, soy sauce and honey. return lamb to the pan; heat through. serve with noodles.
