Ingredients

- 1 medium onion, chopped
- 1/2 cup chopped mushroom
- 3 tablespoons vegetable oil
- 7 eggs
- 1/3 cup milk
- 2 cloves garlic, minced
- 2 teaspoons dried oregano or 2 teaspoons italian seasoning
- 1 teaspoon parsley flakes
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1/2 cup shredded mozzarella cheese (2 ounces)
- 1/4 cup grated parmesan cheese
- 8 ounces mild italian sausage, cooked and crumbled
- 1 (10 ounce) package frozen chopped spinach, thawed and drained
- 1/2 cup shredded mozzarella cheese
- 1/4 cup parmesan cheese
Recipe
- 1 saute onion and mushrooms in oil until tender; set aside.
- 2 combine eggs and milk; beat well.
- 3 add garlic, oregano, parsley, salt and pepper, beating well.
- 4 stir in reserved onion mixture, 1/2 cup mozzarella cheese, 1/4 cup parmasan cheese, sausage and spinach.
- 5 pour mixture into a buttered 9-inch square baking dish; sprinkle with remaining cheeses.
- 6 bake at 350 degrees for 35 to 40 minutes or until set.
