Frittatas

Ingredients

  • Servings: 8
  • 1 medium onion, chopped
  • 1/2 cup chopped mushroom
  • 3 tablespoons vegetable oil
  • 7 eggs
  • 1/3 cup milk
  • 2 cloves garlic, minced
  • 2 teaspoons dried oregano or 2 teaspoons italian seasoning
  • 1 teaspoon parsley flakes
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 cup shredded mozzarella cheese (2 ounces)
  • 1/4 cup grated parmesan cheese
  • 8 ounces mild italian sausage, cooked and crumbled
  • 1 (10 ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup parmesan cheese

Recipe

  • 1 saute onion and mushrooms in oil until tender; set aside.
  • 2 combine eggs and milk; beat well.
  • 3 add garlic, oregano, parsley, salt and pepper, beating well.
  • 4 stir in reserved onion mixture, 1/2 cup mozzarella cheese, 1/4 cup parmasan cheese, sausage and spinach.
  • 5 pour mixture into a buttered 9-inch square baking dish; sprinkle with remaining cheeses.
  • 6 bake at 350 degrees for 35 to 40 minutes or until set.
