Ingredients

- 1 tablespoon extra virgin olive oil
- 1 tablespoon oyster sauce
- 1 teaspoon lemon juice
- 1/3 cup water
- 3/4 cup julianne carrot
- 1 1/2 cups broccoli florets
- 2 cups sliced button mushrooms
- 1 cup fresh spinach
- 1/2 cup egg
Recipe
- 1 heat olive oil over a medium-high heat.
- 2 add broccoli florets.
- 3 add mushrooms.
- 4 saute until mushrooms start to get soft.
- 5 add water and oyster sauce.
- 6 add julianne carrots.
- 7 saute for 1 to 2 minutes.
- 8 move vegetables to one side of skillet and add egg whites into the other side and cook using the sauce created until light and fluffy.
- 9 remove eggs.
- 10 add spinach and saute until spinach is just cooked.
- 11 add vegetables to bowl and place scrambled egg whites to top.
