Heart Healthy Vegetable And Egg Brunch Bowl

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon oyster sauce
  • 1 teaspoon lemon juice
  • 1/3 cup water
  • 3/4 cup julianne carrot
  • 1 1/2 cups broccoli florets
  • 2 cups sliced button mushrooms
  • 1 cup fresh spinach
  • 1/2 cup egg

Recipe

  • 1 heat olive oil over a medium-high heat.
  • 2 add broccoli florets.
  • 3 add mushrooms.
  • 4 saute until mushrooms start to get soft.
  • 5 add water and oyster sauce.
  • 6 add julianne carrots.
  • 7 saute for 1 to 2 minutes.
  • 8 move vegetables to one side of skillet and add egg whites into the other side and cook using the sauce created until light and fluffy.
  • 9 remove eggs.
  • 10 add spinach and saute until spinach is just cooked.
  • 11 add vegetables to bowl and place scrambled egg whites to top.
