Favorite Stroganoff

Total Time: 1 hr 15 mins Preparation Time: 15 mins Cook Time: 1 hr

Ingredients

  • 1 medium onion, diced
  • 1 tablespoon olive oil
  • 1 lb sirloin steak
  • 1/2 lb sliced mushrooms
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 teaspoon paprika
  • 1/2 teaspoon dry mustard
  • 2 tablespoons dry sherry or 2 tablespoons cognac
  • salt and pepper
  • 1/2 cup light sour cream

Recipe

  • 1 slice the sirloin into 1/4 inch by 2 inch slices, set aside.
  • 2 sauté onion and mushrooms in olive oil until softened.
  • 3 add the sirloin, cover and simmer on medium low for 30 minutes.
  • 4 drain 1/2 of the juice from the pan.
  • 5 add the sherry, cream of mushroom soup, paprika, dry mustard, salt and pepper.
  • 6 cover and simmer on low for 10 minutes.
  • 7 add the sour cream to the mixture and heat through.
  • 8 serve over egg noodles or rice.
