Ingredients

- 1 chopped red bell pepper
- 3 king oyster mushrooms
- 4 chopped baby carrots
- 2 celery ribs
- 1/3 onion
- 3 garlic cloves
- 28 ounces stewed tomatoes
- 14 ounces tomato sauce
- 10 ounces kidney beans
- 12 ounces corn
- 3 tablespoons chili flakes
- 3 tablespoons chili powder
- 1 1/4 teaspoons salt
- 1 cinnamon stick
- 3 dried apricot halves
- 1/4 cup raisins
- salt & pepper
Recipe
- 1 to pot add onion, pepper, mushrooms, carrots, celery, and garlic; cook till tender.
- 2 add stewed tomatoes, tomato sauce, beans, corn, chili flakes and powder, salt, pepper, cinnamon, apricots and raisins.
- 3 break up the stewed tomatoes while it's cooking so there are chunks.
- 4 bring to boil.
- 5 reduce to simmer for 30 minutes or more.take out cinnamon.
