Hearty Breakfast

Total Time: 1 hr 5 mins Preparation Time: 45 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 2 lbs potatoes, cubed
  • 1/2 lb bacon
  • 1 medium green bell pepper, coarsely chopped
  • 1 medium red bell pepper, coarsely chopped
  • 1 onion, coarsely chopped
  • 2 cups sliced mushrooms, sliced thin
  • salt and pepper
  • 2 -3 cups shredded cheese (american. sharp cheddar or havarti works well for me)
  • 8 eggs

Recipe

  • 1 boil the potatoes until tender but still firm, 12 to 15 minutes; drain.
  • 2 place bacon in a large, deep skillet.
  • 3 cook over medium high heat until evenly brown.
  • 4 cut into small chunks; set aside.
  • 5 place potatoes into skillet, and cook on medium heat until browned.
  • 6 flip potatoes occasionally to prevent sticking.
  • 7 stir in green pepper, red pepper, onion, and mushrooms.
  • 8 cook until vegetables are tender.
  • 9 stir in cooked bacon, and season with salt and pepper.
  • 10 cover with shredded cheese, and turn mixture until cheese is melted.
  • 11 keep on low heat while cooking eggs.
  • 12 cook eggs to your preferred style.
  • 13 place potatoes in a large serving dish, and top with eggs.
