Hearty Breakfast

Ingredients
- Servings: 4
- 2 lbs potatoes, cubed
- 1/2 lb bacon
- 1 medium green bell pepper, coarsely chopped
- 1 medium red bell pepper, coarsely chopped
- 1 onion, coarsely chopped
- 2 cups sliced mushrooms, sliced thin
- salt and pepper
- 2 -3 cups shredded cheese (american. sharp cheddar or havarti works well for me)
- 8 eggs
Recipe
- 1 boil the potatoes until tender but still firm, 12 to 15 minutes; drain.
- 2 place bacon in a large, deep skillet.
- 3 cook over medium high heat until evenly brown.
- 4 cut into small chunks; set aside.
- 5 place potatoes into skillet, and cook on medium heat until browned.
- 6 flip potatoes occasionally to prevent sticking.
- 7 stir in green pepper, red pepper, onion, and mushrooms.
- 8 cook until vegetables are tender.
- 9 stir in cooked bacon, and season with salt and pepper.
- 10 cover with shredded cheese, and turn mixture until cheese is melted.
- 11 keep on low heat while cooking eggs.
- 12 cook eggs to your preferred style.
- 13 place potatoes in a large serving dish, and top with eggs.
