Eggs Olé

Total Time: 1 hr 15 mins Preparation Time: 30 mins Cook Time: 45 mins

Ingredients

  • 8 slices bread
  • 1 cup butter, melted
  • 2 cups sharp cheddar cheese, grated
  • 1/8-1/4 cup green onion, finely chopped
  • 1 lb sausage, browned (try turkey sausage. it is tasty and healthier.)
  • 1 (8 ounce) carton mushrooms, sliced and sauteed
  • 8 eggs, beaten
  • 2 1/2 cups milk
  • 1/2 cup half-and-half
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground mustard

Recipe

  • 1 brush or dip the bread in butter and layer in the bottom of a greased 9" x 13" or larger baking dish.
  • 2 sprinkle cheese, green onions, mushrooms, and sausage over top of the bread.
  • 3 beat eggs, milk, and half and half, together with salt and mustard.
  • 4 pour over the mixture in the baking dish.
  • 5 refrigerate overnight.
  • 6 bake 45 minutes, uncovered, at 325 degrees. (baking two at a time usually takes closer to 60 minutes.).
