Crock-pot Barley Casserole

Total Time: 6 hrs 15 mins Preparation Time: 15 mins Cook Time: 6 hrs

Ingredients

  • Servings: 4
  • 1 cup uncooked pearl barley
  • 1/2 cup v- 8 juice
  • 1/4 teaspoon pepper
  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 red bell pepper, chopped
  • 1 cup chopped mushroom
  • 2 1/2 cups vegetable broth
  • 1/3 cup toasted pine nuts

Recipe

  • 1 combine all ingredients except pine nuts in a 3-4 quart slow cooker (do not use a larger crockpot).
  • 2 cover and cook on low for 6-8 hours until barley and vegetables are tender.
  • 3 sprinkle with nuts just before serving.
