Ham & Asparagus Casserole

Ingredients

- 1 (10 ounce) package frozen cut asparagus, thawed and drained
- 4 hard-boiled eggs, peeled and chopped
- 1 cup cubed cooked ham
- 1/4 cup shredded american cheese
- 2 tablespoons chopped green peppers
- 2 tablespoons chopped onions
- 1 tablespoon chopped fresh parsley
- 1 tablespoon lemon juice
- 1/2 cup light cream
- 1 cup condensed cream of mushroom soup, undiluted
- 1 cup breadcrumbs
- 2 tablespoons butter, melted
Recipe
- 1 preheat oven to 375 degrees.
- 2 in a greased 2 1/2 quart baking dish, combine asparagus, eggs and ham.
- 3 add cheese, green pepper, onion and parsley, mix gently.
- 4 in a small bowl, blend lemon juice, cream and soup, add to casserole and mix well.
- 5 combine bread crumbs, and 2 tablespoons butter, sprinkle over casserole.
- 6 bake for 25 minutes.
- 7 let stand a few minutes before serving.
