Ham & Asparagus Casserole

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 6
  • 1 (10 ounce) package frozen cut asparagus, thawed and drained
  • 4 hard-boiled eggs, peeled and chopped
  • 1 cup cubed cooked ham
  • 1/4 cup shredded american cheese
  • 2 tablespoons chopped green peppers
  • 2 tablespoons chopped onions
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon lemon juice
  • 1/2 cup light cream
  • 1 cup condensed cream of mushroom soup, undiluted
  • 1 cup breadcrumbs
  • 2 tablespoons butter, melted

Recipe

  • 1 preheat oven to 375 degrees.
  • 2 in a greased 2 1/2 quart baking dish, combine asparagus, eggs and ham.
  • 3 add cheese, green pepper, onion and parsley, mix gently.
  • 4 in a small bowl, blend lemon juice, cream and soup, add to casserole and mix well.
  • 5 combine bread crumbs, and 2 tablespoons butter, sprinkle over casserole.
  • 6 bake for 25 minutes.
  • 7 let stand a few minutes before serving.
