Florentine Crepes

Total Time: 1 hr 20 mins Preparation Time: 40 mins Cook Time: 40 mins

Ingredients

  • 3 eggs, slightly beaten
  • 2/3 cup flour
  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 1/2 cups sharp cheddar cheese, shredded
  • 3 tablespoons flour
  • 3 eggs, slightly beaten
  • 2/3 cup mayonnaise
  • 1 (10 ounce) package frozen chopped spinach, thawed, drained
  • 1 (4 ounce) can mushrooms, drained
  • 6 slices bacon, cooked crisply and crumbled
  • 1/2 teaspoon salt
  • 1 dash pepper

Recipe

  • 1 combine 3 eggs, 2/3 c flour, 1/2 t salt, and 1 cup milk.
  • 2 beat until smooth.
  • 3 let stand 30 minutes.
  • 4 preheat oven to 350 degrees.
  • 5 combine remaining ingredients in another bowl.
  • 6 pour 2 t rested batter into hot, lightly greased 8-inch skillet.
  • 7 cook on one side only, until underside is lightly browned.
  • 8 fit crepes into greased muffin pan creating a ruffly edge.
  • 9 fill wth spinach stuffing.
  • 10 bake for 40 minutes or until filling is set and crepes nicely browned.
