Chicken Stroganoff

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 3/4 cup onion, chopped
  • 8 ounces mushrooms, sliced
  • 1 tablespoon olive oil
  • 18 ounces chicken pieces, cooked
  • 1 -8 ounce plain low-fat yogurt
  • 4 ounces light sour cream
  • 3 tablespoons flour
  • 1 1/2 teaspoons paprika
  • 1/4 teaspoon salt
  • black pepper
  • 16 ounces egg noodles, cooked

Recipe

  • 1 spray a skillet with nonstick cooking spray.
  • 2 saute onion and mushrooms in olive oil.
  • 3 add cooked chicken and cook for 3-4 minutes or till warm.
  • 4 in a small bowl mix yogurt, sour cream, flour, paprika and salt.
  • 5 stir in yogurt mixture and cook until slightly thickened and bubbly.
  • 6 serve over hot noodles.
