Dirty Potatoes

Ingredients

- 1/2 cup chopped onion
- 1/2 lb finely chopped fresh mushrooms
- 4 tablespoons butter
- 1 teaspoon dried tarragon
- 1/4 cup wine
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground pepper
- 3 large potatoes, peeled and cut into 1 x 2 inch chunks
- 1/4 cup water
- 1 cup milk
Recipe
- 1 put onion, mushrooms and 2 tablespoons of the butter in 2-quart casserole.
- 2 microwave on high power, uncovered, 2 minutes.
- 3 stir in tarragon, wine, salt and pepper.
- 4 microwave on high power for 5 to 7 minutes, until vegetables are very tender, stirring once.
- 5 set aside to keep warm.
- 6 put potatoes and water in 2-quart casserole, cover.
- 7 microwave on high power for 14 to 16 minutes, until very tender, stirring twice.
- 8 let stand, covered, 3 minutes.
- 9 add the rest of the butter (2 tablespoons) to potatoes, mash.
- 10 add mushroom mixture with its liquor and milk.
- 11 whip until fluffy.
- 12 add more milk if too thick.
