Gulf Coast Casserole

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 2 pints oysters, drained
  • 1/2 cup butter or 1/2 cup margarine, divided
  • 1 lb mushroom, sliced
  • 2 (12 ounce) packages peeled frozen shrimp, thawed in boiling water
  • 1 cup chopped cooked chicken
  • 1 (10 3/4 ounce) can mushroom soup
  • 1 tablespoon grated onion
  • 1/2-1 teaspoon pepper
  • 1 teaspoon salt
  • 1 tablespoon chopped parsley
  • 2 tablespoons sherry wine
  • cayenne pepper

Recipe

  • 1 saute oysters in 2 tablespoons butter/margarine until edges curl, then drain.
  • 2 saute mushrooms in other 4 tablespoons butter/margarine. & drain.
  • 3 combine all ingredients.
  • 4 bake at 350f for 30 minutes.
  • 5 serve over wild rice.
