Double Spinach Noodles

Ingredients
- Servings: 4
- 1/2 lb spinach noodles
- 2 tablespoons butter
- 2 garlic cloves, minced
- 1 1/2 cups sliced mushrooms
- 1 lb spinach, stemmed, well washed and chopped
- 1 cup sour cream
- 1/4 cup parmesan cheese, grated
- 2 teaspoons dried basil or 2 tablespoons fresh basil
- 1/2 teaspoon dried oregano
- 1 pinch nutmeg
- salt & freshly ground black pepper, to taste
Recipe
- 1 cook spinach noodles al dente and drain.
- 2 meanwhile, melt the butter in a large skillet until it foams.
- 3 add the garlic and mushrooms and saute over low heat until the mushrooms are about half done.
- 4 add the spinach, cover, and saute over low heat until the spinach has wilted.
- 5 add the cooked noodles and the remaining ingredients and simmer over very low heat for about 10 minutes.
