Double Spinach Noodles

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 1/2 lb spinach noodles
  • 2 tablespoons butter
  • 2 garlic cloves, minced
  • 1 1/2 cups sliced mushrooms
  • 1 lb spinach, stemmed, well washed and chopped
  • 1 cup sour cream
  • 1/4 cup parmesan cheese, grated
  • 2 teaspoons dried basil or 2 tablespoons fresh basil
  • 1/2 teaspoon dried oregano
  • 1 pinch nutmeg
  • salt & freshly ground black pepper, to taste

Recipe

  • 1 cook spinach noodles al dente and drain.
  • 2 meanwhile, melt the butter in a large skillet until it foams.
  • 3 add the garlic and mushrooms and saute over low heat until the mushrooms are about half done.
  • 4 add the spinach, cover, and saute over low heat until the spinach has wilted.
  • 5 add the cooked noodles and the remaining ingredients and simmer over very low heat for about 10 minutes.
