Curried Butter Bean Casserole

Total Time: 43 mins Preparation Time: 3 mins Cook Time: 40 mins

Ingredients

  • Servings: 6
  • 20 ounces frozen butter beans
  • 3 slices bacon
  • 1/2 cup chopped onion
  • 1 garlic clove, crushed
  • 1/2 teaspoon curry powder
  • 10 3/4 ounces condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/8 cup wine or 1/8 cup dry sherry
  • 3 1/2 ounces french's french fried onion rings

Recipe

  • 1 cook beans until just tender (about 7 minutes) and drain.
  • 2 cook bacon and remove from pan.
  • 3 in bacon grease, saute onion, garlic and curry powder until onion is tender.
  • 4 mix soup, sour cream, and wine and add to pan. heat but do not boil.
  • 5 add beans and crumbled bacon and pour into a greased 1 1/2 quart casserole.
  • 6 top with onion rings and bake uncovered at 325 degrees fahrenheit for 25 minutes.
