Curried Butter Bean Casserole

Ingredients
- Servings: 6
- 20 ounces frozen butter beans
- 3 slices bacon
- 1/2 cup chopped onion
- 1 garlic clove, crushed
- 1/2 teaspoon curry powder
- 10 3/4 ounces condensed cream of mushroom soup
- 1/2 cup sour cream
- 1/8 cup wine or 1/8 cup dry sherry
- 3 1/2 ounces french's french fried onion rings
Recipe
- 1 cook beans until just tender (about 7 minutes) and drain.
- 2 cook bacon and remove from pan.
- 3 in bacon grease, saute onion, garlic and curry powder until onion is tender.
- 4 mix soup, sour cream, and wine and add to pan. heat but do not boil.
- 5 add beans and crumbled bacon and pour into a greased 1 1/2 quart casserole.
- 6 top with onion rings and bake uncovered at 325 degrees fahrenheit for 25 minutes.
