Hide The Veggies Pasta Sauce

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 1 garlic clove, crushed
  • 1 cup carrot, chopped
  • 1 cup mushroom, sliced
  • 1/2 cup celery, diced
  • 1 (14 ounce) can diced tomatoes, undrained
  • 6 ounces chicken stock or 6 ounces vegetable stock
  • 1/2 teaspoon brown sugar
  • salt and pepper

Recipe

  • 1 heat the oil in a pan, add the onion and garlic, and saute for about 3 minutes.
  • 2 add the carrots, celery and mushrooms, and cook for about 15 minutes, or until softened.
  • 3 add the tomatoes, stock and sugar, season to taste, and simmer for 10 minutes.
  • 4 blend to a puree.
  • 5 serve over cooked pasta of your choice.
