Greek Mushroom Salad

Ingredients

- 1 tablespoon olive oil
- 1/2 lb mushroom
- 3 garlic cloves, chopped fine
- 1 teaspoon basil or 1 teaspoon marjoram
- 1 medium tomato, diced
- 3 tablespoons lemon juice
- 1/2 cup water
- 1 pinch salt
- 1 pinch fresh pepper, ground
- 1 tablespoon fresh parsley or 1 tablespoon fresh coriander, chopped
Recipe
- 1 heat the oil on low in a frying pan, then gently fry the mushrooms for 2-3 minutes.
- 2 do not overcook.
- 3 sprinkle in garlic and basil, then toss the mixture for a minute or two so that mushrooms are well coated.
- 4 add the tomato, lemon juice, water, salt, and pepper.
- 5 stir together and cook until the tomato softens.
- 6 remove from heat and let cool.
- 7 garnish with chopped herbs.
