Cola Braised Lamb Stew

Ingredients
- Servings: 4
- 1 tablespoon oil
- 2 lbs country-style boneless lamb ribs, excess fat trimmed, cut into 1 1/2 to 2 inch cubes
- 2 cups cola (do not use diet)
- 6 garlic cloves, minced
- 3 tablespoons soy sauce
- 2 tablespoons chopped peeled ginger
- 1 bunch green onion, chopped
- 1 1/2 cups sliced mushrooms
- cooked brown rice or cooked rice, to serve stew over
Recipe
- 1 heat oil in large pot over high heat.
- 2 add half of lamb; sauté until brown.
- 3 transfer lamb to bowl.
- 4 repeat with remaining lamb.
- 5 return lamb to pot.
- 6 turn off heat and slowly add cola into pot.
- 7 bring to a boil.
- 8 reduce heat to med-low, cover and simmer 30 minute.
- 9 add garlic, soy sauce, ginger, mushrooms and half of the onions.
- 10 cook and simmer until lamb is tender, about 40 minutes.
- 11 uncover and simmer until sauce is slightly thickened.
- 12 season with salt and pepper; transfer to bowl.
- 13 sprinkle with remaining onions.
- 14 serve over rice.
