Cola Braised Lamb Stew

Total Time: 1 hr 55 mins Preparation Time: 15 mins Cook Time: 1 hr 40 mins

Ingredients

  • Servings: 4
  • 1 tablespoon oil
  • 2 lbs country-style boneless lamb ribs, excess fat trimmed, cut into 1 1/2 to 2 inch cubes
  • 2 cups cola (do not use diet)
  • 6 garlic cloves, minced
  • 3 tablespoons soy sauce
  • 2 tablespoons chopped peeled ginger
  • 1 bunch green onion, chopped
  • 1 1/2 cups sliced mushrooms
  • cooked brown rice or cooked rice, to serve stew over

Recipe

  • 1 heat oil in large pot over high heat.
  • 2 add half of lamb; sauté until brown.
  • 3 transfer lamb to bowl.
  • 4 repeat with remaining lamb.
  • 5 return lamb to pot.
  • 6 turn off heat and slowly add cola into pot.
  • 7 bring to a boil.
  • 8 reduce heat to med-low, cover and simmer 30 minute.
  • 9 add garlic, soy sauce, ginger, mushrooms and half of the onions.
  • 10 cook and simmer until lamb is tender, about 40 minutes.
  • 11 uncover and simmer until sauce is slightly thickened.
  • 12 season with salt and pepper; transfer to bowl.
  • 13 sprinkle with remaining onions.
  • 14 serve over rice.
