Healthy Meatball Stroganoff With Brown Rice

Ingredients

- 1 lb 93% lean ground beef
- 1 tablespoon olive oil
- 1 small onions, chopped or 1 cup chopped onion
- 2 garlic cloves, minced
- 2 tablespoons all-purpose flour
- 1 1/2 cups beef broth
- 1/4 teaspoon black pepper
- 2 teaspoons worcestershire sauce
- 2 cups sliced mushrooms
- 1/4 cup plain fat free greek yogurt
- 3 cups cooked brown rice
Recipe
- 1 form ground beef into small meatballs.
- 2 heat olive oil in skillet and brown meatballs on all sides. remove and keep warm.
- 3 add onion to skillet and cook until tender and beginning to brown.
- 4 add minced garlic and cook for about 2 minutes more.
- 5 add flour, mix well, and cook until beginning to brown. add beef broth, stir well, and cook until slightly thickened.
- 6 add pepper, worcestershire sauce, and mushrooms, and cook until mushrooms are tender.
- 7 stir in yogurt, then add meatballs.
- 8 cook until heated through, but do not boil.
- 9 taste sauce and correct seasonings, if necessary.
- 10 one serving is 1/4 recipe and 3/4 cup brown rice.
