Dijon Mushroom Beef

Ingredients

  • Servings: 4
  • 1/2 lb fresh mushrooms, sliced
  • 1 medium onion, sliced
  • 2 teaspoons olive oil
  • 1 lb boneless beef top sirloin steak, thinly sliced
  • 1 (10 3/4 ounce) can reduced-fat reduced-sodium condensed cream of mushroom soup, undiluted
  • 3/4 cup nonfat milk
  • 2 tablespoons dijon mustard
  • hot cooked no yolk noodles (optional)

Recipe

  • 1 in a large nonstick skillet, saute mushrooms and onion in oil until tender.
  • 2 remove and set aside.
  • 3 in the same skillet, cook beef until no longer pink.
  • 4 add the soup, milk, mustard and mushroom mixture.
  • 5 bring to a boil and reduce heat; cook and stir until thickened.
  • 6 serve over hot cooked noodles if desired.
