Ginger Chicken Soup

Total Time: 2 hrs 15 mins Preparation Time: 15 mins Cook Time: 2 hrs

Ingredients

  • Servings: 6
  • 2 quarts chicken stock, preferably home made
  • 6 chicken legs, deboned
  • 1 piece ginger, finely diced
  • 6 cloves finely diced garlic
  • 2 tablespoons butter (optional)
  • 1 whole onion, diced
  • 1 1/2 cups diced mushrooms
  • 2 tablespoons olive oil
  • salt & pepper
  • 4 tablespoons lemon juice
  • 1/2 cup diced scallion
  • 1/2 cup diced shallot
  • 3 tablespoons soy sauce
  • french bread

Recipe

  • 1 take the onion,garlic,scallions,shallots,p‚ lemon juice.
  • 2 sweat in the butter and olive oil.
  • 3 place in chicken pieces and stock and bring to a boil.
  • 4 reduce heat and add salt and pepper.
  • 5 simmer for 2 hours.
  • 6 place in bowl over slice of french bread drizzle olive oil and soy sauce.
  • 7 enjoy!
