Gourmet Mushroom Pate

Total Time: 55 mins Preparation Time: 15 mins Cook Time: 40 mins

Ingredients

  • 1 cup butter
  • 2 lbs mushrooms, cleaned and finely chopped
  • 1 teaspoon salt
  • 1/2 teaspoon lemon pepper
  • 1/2 teaspoon thyme
  • 1 teaspoon cayenne pepper
  • 3 egg yolks
  • 1 tablespoon whipping cream or 1 tablespoon half-and-half cream

Recipe

  • 1 in a skillet melt the butter over medium heat.
  • 2 add mushrooms.
  • 3 cook until the mushrooms are well browned and the liquid has cooked down (about 35 minutes).
  • 4 stir in the lemon pepper.
  • 5 thyme,cayenne& salt and remove from heat.
  • 6 combine egg yolks with cream.
  • 7 add 1/4 of the mushroom mixture to the egg yolks, stirring well.
  • 8 combine yolk mixture with mushrooms in the skillet.
  • 9 cook over low heat for 2-3 minutes.
  • 10 remove from heat and pour into a 3 cup container.
  • 11 chill& firm.
  • 12 serve at room temperature with crackers or slices of french bread.
