Gourmet Mushroom Pate

Ingredients
- 1 cup butter
- 2 lbs mushrooms, cleaned and finely chopped
- 1 teaspoon salt
- 1/2 teaspoon lemon pepper
- 1/2 teaspoon thyme
- 1 teaspoon cayenne pepper
- 3 egg yolks
- 1 tablespoon whipping cream or 1 tablespoon half-and-half cream
Recipe
- 1 in a skillet melt the butter over medium heat.
- 2 add mushrooms.
- 3 cook until the mushrooms are well browned and the liquid has cooked down (about 35 minutes).
- 4 stir in the lemon pepper.
- 5 thyme,cayenne& salt and remove from heat.
- 6 combine egg yolks with cream.
- 7 add 1/4 of the mushroom mixture to the egg yolks, stirring well.
- 8 combine yolk mixture with mushrooms in the skillet.
- 9 cook over low heat for 2-3 minutes.
- 10 remove from heat and pour into a 3 cup container.
- 11 chill& firm.
- 12 serve at room temperature with crackers or slices of french bread.
