Garden Sauté

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 cup crisco corn oil
  • 1 large onion, quartered, then halved
  • 2 medium zucchini, cut into 1/2 inch slices
  • 2 medum yellow squash, cut into 1/2 nch slices
  • 4 ounces mushrooms, halved
  • 2 teaspoons dried oregano
  • salt and pepper
  • 1/3 cup grated parmesan cheese

Recipe

  • 1 in a large skillet with a lid, heat crisco oil over medium high heat. add onion. saute 3 minutes. add zucchini, yellow squash, mushrooms, oregano and salt and pepper; sauté 5 minutes more.
  • 2 cover and cook until tender, about 10 minutes. sprinkle with parmesan cheese; serve immediately.
