Ingredients

- 1/2 cup crisco corn oil
- 1 large onion, quartered, then halved
- 2 medium zucchini, cut into 1/2 inch slices
- 2 medum yellow squash, cut into 1/2 nch slices
- 4 ounces mushrooms, halved
- 2 teaspoons dried oregano
- salt and pepper
- 1/3 cup grated parmesan cheese
Recipe
- 1 in a large skillet with a lid, heat crisco oil over medium high heat. add onion. saute 3 minutes. add zucchini, yellow squash, mushrooms, oregano and salt and pepper; sauté 5 minutes more.
- 2 cover and cook until tender, about 10 minutes. sprinkle with parmesan cheese; serve immediately.
